  • The winter time is the perfect time for a sweet harvest. The Oregon Maple Project’s Eliza Nelson is after sap.
    "We do have Big Leaf Maple all over Camp Colton," Nelson said.
    The Oregon Maple Project is a nonprofit that aims to inspire, engage and connect people to nature through the production of Bigleaf Maple Syrup.
    Near Estacada, the trees are dripping sap to make maple syrup.
    "Catching sunlight after a frost is always a good thing to get a maple flowing."
    Ben Malvin taps the trees for sap on his family's land. "Just take a sample. It's actually sweeter than a lot of the sap I've had." It takes 86 gallons of sap to make one gallon of syrup.
