Gluten-free HALWA made from Cornmeal | VEGAN Recipe | Makai ka Halwa

  • A super quick, easy, mouth watering Halwa recipe. This version is made using cornmeal, it is similar in texture to semolina which is commonly used in this dish. Delicious when served warm along with a cup of tea.
    INGREDIENTS:
    1 cup medium ground cornmeal
    ⅓ cup melted coconut oil
    ¾ cup sugar
    3 cups water
    ½ cup golden sultanas
    ½ cup crushed cashew nuts
    ¼ teaspoon cardamom powder
    pinch of salt
    1 tablespoon crushed pistachios (topping)
    pinch of saffron (topping)
    DIRECTIONS:
    Pour in coconut oil into a well heated saucepan. Add in the cornmeal. Immediately lower the heat to medium-low. Stir and cook the cornmeal to a light golden color. Take off the heat and continue to stir to prevent the cornmeal from
    over-browning from the heat of the pan.
    Add water and sugar into a small pan. Cook the syrup on a low heat and allow the sugar to dissolve.
    Return cornmeal to the heat. Using a ladle, gradually add in the sugar syrup. Stir continuously to ensure a smooth blend. NOTE: Take care as you stir - the mixture will be hot and bubbling.
    When there are no lumps in the halwa mixture, add in the sultanas, cashew nuts, and a pinch of salt. Stir in the cardamom powder. Continue to stir and boil the water down.
    The halwa is done when it begins to “leave” the sides of the pan and the only liquid remaining is the oil.
    For the topping, crush a small handful of pistachios. Spoon the hot halwa into a serving dish. Sprinkle the crushed pistachios over the top of the halwa. Add strands of saffron to decorate and flavor.
    Store in a refrigerator and reheat when serving.

    I often make halwa with cornmeal, as I follow a gluten free diet. I usually use ghee or butter to fry the polenta, and dessicated coconut for flavour - but I think coconut oil would really work well, and eliminate the need for additional coconut meal. Thanks, I'll give this a try.
