  • Christmas time offers a wealth of traditional holiday treats. Our euromaxx reporter Mathias Stamm set out to try his hand at making some of the best-known specialties from various European countries. Today he starts off in Nuremberg, the best place to learn how to whip up a batch of Germany's version of gingerbread cookies.

    I watch this video over and over. I want to go to that bakery, and Nuremberg is beautiful! Wish I could live there.

      @@juliuskaruso I spent a week there last year. I had a hotel room up near the castle. I loved every minute of it.

      Looks like "Düll" or "Düll Bäckerei". If you can't find them i recommend baking them by yourself^^

    How long are they left to dry? 24 hrs? Also the special equipment he uses to round off the cookie dough, can I purchase that anywhere? Thank you

      When i do them 1-2 hours.
      instead of the special equipment you can use the bottom side of a teacup

    I lived therev qa while but I had to come home to north dakota to learn to make it probably a different recipe but they are delicious and they are rolled n cut on a floured surface and sort of diamond shaped withanalmond in the middle various dried fruit honey n a bakers ammonia for leavejning sounds gross but it bakes out n I think we topped with an egg wash n they stay soft for ever or a very long time due to the egg wash mixture I guess seals in the freshness n yeah sorry I missed the Lieb or love Kuichen I been to their christ Kindle Market in the Old city pretty cool! I got a bunch of nut crackers one year n sent em home for 'Christmas n they got dang good beir there to you know n I drankeeeeeeeeeeeeeeeety of that

    Lovely! I made my grandma a big batch of lebkuchen for Christmas to remind her of home at this time of year. Just sent them off to her yesterday. They really do take patience to make but aren't too difficult when you know what to do. Mine have pretty much the same ingredients to this baker :D I don't know all his spices but I'm sure its not far off.

      I'm sorry for replying sooo late, I didn't check through all my
      notifications on here, but I'm happy to share my recipe if you are still
      interested! :)
      Ingredients:
      113g Butter, softened
      1 Cup Soft brown sugar
      3 Cups Plain flour
      Lebkuchen Spices:
      (2 tablespoons ground Cinnamon, 2 teaspoons ground Cloves, 1/2 teaspoon
      ground Allspice, 1/4 ground Nutmeg, 1/2 teaspoon ground Corriander, 1/2
      teaspoon ground Ginger, 1/2 teaspoon ground Anise seed)
      1 1/2 tablespoons baking Soda/ Bicarbonate of Soda
      1/3 Cup Marzipan (optional)
      1 3/4 Cup ground Almonds/Almond Flour
      1/4 cup chopped Almonds
      1/4 cup chopped Hazelnuts
      1/2 Cup Candied Lemon Peel, diced
      1/2 Cup Apricot Jam
      1 Cup Milk (dairy, soya or almond milk are all fine)
      1 Cup Good Honey
      1 Cup Molasses or Treacle
      2 tablespoons Cocoa Powder
      4 Eggs
      Vanilla extract
      Lebkukchen rice paper circles/wafers (optional)
      To decorate:
      Whole /Sliced Almonds
      Dark Chocolate (Or Icing)
      Method:
      Warm the Molasses/Treacle and the Honey in a large pot on medium low
      heat (be careful not to burn it). Mix together the sugar and softened
      butter in a bowl until creamy. Add in the eggs and vanilla, beat
      together well. Add the Apricot jam and lemon peel.
      Add the mixture to the heated honey and molasses/treacle in the large
      pot. Next add in your baking soda. Add in the Lebkuchen spices, milk,
      ground almonds, nuts, cocoa and flour. Mix everything togetheruntil well
      combined.
      Leave the mixture well covered with cling film and lid to sit overnight,
      or at the very least 8 hours. This will let the spices and other
      ingredient's flavour blend and strengthen, the mixture will also firm up
      nicely to work with.
      Uncover and divide the mixture into circles. You can divide them from
      about 2 inches wide or larger if you prefer. If you have the Lebukchen
      wafer circles you can use them as your size marker, covering them. Place
      them on a baking sheet covered with greased or sprayed baking paper.
      Remember to give them space from each other as they like to spread out
      when baking.
      Bake in a pre-heated oven on about 180 C / 350F for 25-30 mins.
      Depending on the speed of your oven. Check them with a toothpick and if
      it comes out clear they are done.
      Allow to cool on a wire rack.
      If decorating, melt the chocolate and coat the top side of the
      lebkuchen. Decorate with the Almonds. Leave to set until the chocolate
      is competely cooled and firm.

      You can make one like in the video at home. Just get 2 wood disk, a wood cylinder, 2 nails and a hammer
