@@gaatutube It's a multi-course menu so most normal folks will be full. If you're a glutton then I guess you'll have to get someone else afterwards.
But the point of these kinds of establishments aren't to get people to be full in the literal sense, though most people do get full due to the amount of dishes that come out, but it's more to fulfill an emotional experience of culinary excellency. It'd be no different than someone wanting to own and drive a Porsche 911 GT2 RS when a Nissan Sentra can get the job of taking you from point A to point B just the same.

I suspect that there is no implication in this article that one approach to cooking is actually better than the other, merely that Heston and other chefs of his particular ilk are taking a different approach to how they look at food, cooking and the dining experience.
Just as their are a hundred different approaches to the vast multi-plex of creativity that we call 'Art' (painting, sculpting, mixed-media of every variety and digital, etc.) Cookery is everything from from the high flown explorations of the Molecular Gatronomist to the homey comforts of soup simmering on any home's back burner or the the earthy pleasure of a well-seasoned piece of meat grilling over an open pit of coals.

Most kitchens are high pressure places , tempers do run high and margin for error is limited .

invisiblesurge44 not really true. math is used to prove science (in relation to a reference) to others. science does not need math itself. and nature doesnt need science itself😊

all that is nice and fine because over the time period you have resources to do so and you have already calculated the costs versus revenue chart to sustain but all over the world there is that man/woman power which work in all sorts of outlets and are poorly paid to sustain we often fail to recognize it because our world is good and running well. that is the point i am trying to make since long.

These types of restaurants have small dishes, yes, but it's a tasting menu with many many dishes, sometimes 30 different and they keep coming, so you will get full in the end.
