afaik the reason unity was able to search through windows' settings was because they used standardized tile bars. Now that menus are handled in a more unique way application by application, it's much harder to automatically parse through and find all of the settings to display to the user and search through

You have an obsession with keyboard launchers.. I had an obsession with keyboards, keyboard layouts, etc.
Went out and got myself a Sun keyboard Type 7, however can't seem to find the drivers for the left cluster to work - regardless of the OS I'm using.
Now I'm currently using the Sun keyboard at work because others need to use my system from time to time and a Bastron Glass Keyboard at home. Love the glass keyboard. However touch typing on it is a bit of a pain.

I loved Launchy during my windows days, Productivity gain was amazing. On linux, I never needed one, because of amazing gnome shell and its extensions. I did install uLauncher but I don't think I ever needed to use it .

I've never heard of a keyboard launcher - must have been living under a rock lol. But I have used keyboard shortcut launchers since Windows in the early 90's and continue to do so now on Linux. There's just nothing faster than e.g. CTRL-ALT-C for Chrome or SUPER-E for my file Explorer (yeah, held over from the old Windows Explorer days). I even use CTRL-ALT-SPACE to open a terminal since that's so frequent (yes I know CTRL-ALT-T is usually default). For less commonly used apps that I haven't setup a shortcut I'm just happy with whatever the built-in menu is, it's quick enough for occasional use.
I've always got a browser open so web searches are usually just CTRL-N to open a new window and start typing. For simple arithmetic many keyboards have a media button that opens a calc app, or again I just ALT-D and type into the browser bar and usually google will spit out a result or unit conversion right there. I can't say I've ever felt any need for anything like a separate special launcher app, but I guess it's very helpful for those who don't know of keyboard shortcuts. And maybe it's easier to import existing settings onto a new install or a second PC.
Bloody microsoft stopped underlining menu toolbar shortcuts by default somewhere along the way, which probably contributed to even less people realising it was possible to use a PC mostly without a mouse. In fact that's what I miss most from the older Windows days - I used to be able to do literally ANYTHING in my daily workflow with a keyboard. Now after nearly a decade on cinnamon I still have to reach for the mouse to simply navigate through control panel options. And there's one damn Nemo thing that stops me using keyboard for everything in it. I'll never go back to Windows but for straight GUI keyboard usage it was, at one time, superior to anything else I've used.

You can set Alt+Space in Ulauncher. You just have to change or unset whatever Alt+Space s currently set to in your Desktop Environment's keyboard settings (ex "Activate the window menu" in Gnome)
