Came across an issue making this thought might help someone else. I do not own a metal 8-inch square baking pan but I do own Corning ware 8-inch sq. baking dish, think glass or enamel if you don't know what that is. Anyway, baking at 400 for 40 min and these were very undercook, so I ended up going almost 15 min longer to bake them. They turned out perfect but if you do use glass cookware figure at least 55+ min. Also used Maple syrup instead of honey for the top, I mean come on maple syrup and blueberries is like peanut butter and chocolate, somethings just have to go together.

I used a square glass baking dish, so I had to bake them about 10 - 15 minutes longer than the recipe stated. This was my first ever attempt at making biscuits, because it always seemed complicated. Making these biscuits was as easy as the video made it appear, which is why I made them. It wasn't complicated nor did it take very long to come together. You should give them a try!
If you want the frozen berry ratio you have to pay for her website. Would have been nice if she had offered that info., I can lesson the buttermilk to 1cup and use 3/4 c frozen blueberries. You can find conversion charts online for FREE.

Anyway I digress. I mixed the butter with what I though was maple syrup and my grandson dipped his finger and made a sour face…🤦🏽♀️🤦🏽♀️🤦🏽♀️thank god he dipped his finger😑. There are lots of substitutes, Put 1 TBL lemon juice OR vinegar in a measuring cup. Fill cup to the one cup line. Stir. There is also a buttermilk powder in a can in the baking aisle. HTH
I made these today and used 8.5 TBL of dry buttermilk POWDER and combined that with the dry ingredients. This amount was based on the directions on the can of buttermilk powder to make 1⅔cup of buttermilk and the recommendation to mix the powder with the other dry ingredients when baking. Then, I used 1⅔ cup cold water for the liquid. Note, since it takes me a long time to use a whole can of this product and I like in a hot, humid climate, I store the opened can in the fridge for a long shelf life.
Biscuits may rise better together, but you don't get that lovely crispness all the way around. But believe me, I love biscuits and we'll eat them no matter.
I made these biscuits, absolutely delicious and came out perfect. But even they were very tasty, I found them to have too much butter. I’m going to make them again with less butter and stevia next time
Due to the lack of lamination, these are still going to be more tender than flaky. That's still fine, as biscuits aren't a homogeneous categorization. Just important to note. It would be difficult to make properly flaky blueberry biscuits, as you really want to drain your frozen blueberries so they don't make your dough too wet, but if you thaw them and try to fold your dough to achieve lamination then you'll end up crushing the berries and make a mess out of the dough anyway.
Why, in this day and age, are we still measuring dry ingredients like flour volumetrically and not by mass? Especially when "it's really important to start with the right ratio of dry ingredients". Every home should have an affordable digital scale at this point.
I'm intrigued about how to make a buttery blueberry biscuits, but I am also intrigued if my Kitchenaid you recommend is giving me lead poisoning. #sillygoofystuff
I made these today, but I halved the recipe and baked it in a loaf pan. It came out really well. I'll definitely be making it again.

This is very true! The same thing happened to me and 55 minutes sounds just about right when using glass bakeware.

You should use a pastry blender to blend the butter into the flour.
Or start with really cold butter and grate it into the flour mixture. That’s what I do when making scones, it distributes evenly and is so easy to do.
