How to make THE BEST Caribbean Rum Cake w/ Butter Rum Glaze

- This recipe was shared with me by a good friend of mine from Panama. She makes this cake for family and social gatherings. It has become a favorite of mine to make during the holidays, especially on New Year's Eve.
Enjoy!
Caribbean Rum Cake
1 C. Chopped Pecans (optional)
1 Box Yellow Cake Mix
1 Box Jell-O Vanilla Pudding Mix (3.4 oz) which is the 4 1/2 C. serving size.
1/2 C. Vegetable Oil
1/2 C. Coco Lopez Cream of Coconut (can be substituted for water)
4 Large Eggs at Room Temperature
1/2 C. Dark Rum
Bake @ 325 degrees 50-60 minutes or until cake is golden brown and tester comes out clean.
Glaze:
1 Stick (1/2 Cup) Salted Butter; if using unsalted butter, add a pinch of salt.
1 C. Granulated Sugar
1/4 C. Water
Cook for 8 minutes without stirring.
1/2 C. Dark Rum (add when flame is turned off)
Serve with whip cream, maraschino cherries or grapes dusted with powder sugar.

Good morning. Sitting here watching your video. This recipe is the same as the Bacardi rum cake that I made for my son's wedding. The difference is the coco Lopez substituted in place of the water. For the glaze, have you tried the coco Lopez instead of the water too? Wonderful!! God bless and keep the videos coming!!!

Mine mine mine love this recipe. I love baking some carribean rum cake. But, after chopping your nuts, soak it in sum rum, brown sugar n cinnamon n put to the side. Also put some vanilla extract n fresh lemon zest in the mix. It's gonna be a game changer 😋 i promise you.

@@iamlove113 I made it yesterday and it was delicious! Soaked the nuts in rum, cinnamon, all spice, vanilla and brown sugar over night. Then dehydrated them in the airfryer until dry then added them to the bunt pan . It was crunchy and soft on the inside - a perfect texture with flavor.

You can loosely wrap it in foil leaving room between the cake and the foil. Hope that information helps 😊. Take care.

hi Dyvonne! Can I use flour and sugar instead of the yellow box cake mix? My normal recipe for rum cake is 2 cups of flour and 1 1/2 cups of sugar. What are your thoughts?

I think that would work, if your cake recipe calls for baking soda or baking powder, be sure to use it so your cake will rise and not be too dense, plus whatever salt the recipe calls for. Hope that information helps! Sending you good vibes for a great cake 😉.
I was wondering if I can sub the coconut cream with either condensed milk or heavy whipping cream.
Hi, yes you can. You can also substitute it for water as well. The Coco Lopez does give it that little something extra though. Hope that information helps! Enjoy.

you talk about flame off but what if it's an electric oven?
Hi,
You would follow the same pattern with the settings. High, medium, low, off. If my flame is off, you would turn off your electric stove. If there is any residual heat coming from the eye, move your pan off the eye. Hope that information helps.

I haven't added pineapple to the recipe before, but.....if I did I would use 1- 8 oz can of crushed pineapple, drained. Then add the drained crushed pineapple to the batter with the other ingredients. Hope that information helps 🙂.
