How to make Corn Fritters using Jiffy Corn Muffin Mix
Hello Everyone!
Corn Fritters are so versatile. You can enjoy them with dinner, or as a quick snack. I hope you enjoy them as much as my family does.

Corn Fritters
1 pkg. Jiffy Corn Muffin Mix
2 Large Eggs at Room Temperature
3/4 C. Frozen Corn, thawed
1 T. Milk
1/4 C. Sour Cream (I use Knudsen)
1 T. Green Onions, green parts only
Pinch Table Salt (1/8 t.)
Oil for frying
Drop in hot oil by Tablespoons. Makes 16-18 Fritters. Serve warm with butter.
Recipe adapted from Jiffy Recipes.

Perfect but needs lime.
Lime is not traditionally added to the dish itself like Ceviche or Salsa would have, but served on the side like I shared in the vlog. I added it to my serving. 😉

I made it, and it didn’t taste as good. I don’t know what I did wrong. Perhaps the baking process? I did bake it for an hour.
Hi, Sorry to hear it didn't come out as planned. If the baking was off for you, try less baking time. Ovens vary which can throw a wrench in things. You can either bake it at 325 for the same time frame, or 350 for a lesser time. Also, check it at about 30 minutes to see how it is baking up. Hope this information helps 🙂.

Hi, Ok, for some reason I got the impression it overbaked on you. If it was under baked, you can bake it for a longer time frame if need be. Happy Baking. 🤞🏽

This is almost identical to a recipe that has been in my family for at least 50 years. Grandma has passed on and tomorrow is Grandpa's 98th birthday. I have never made this and without Grandma's guidance for steps, I am so grateful for your video. (Literally the only difference in the entire recipe is the Cream of Coconut.)
