Being a dynamic mic you're probably gonna want to get your SM7b nice and close to the sound source if you can. In terms of effects you should generally keep these to a minimum, unless you are looking for something very specific like the high amount of reverb that was used in this video. In general, listeners shouldn't notice the processing you've applied, except in circumstances like this one where it's very much part of the performance. I'm not sure how they mic'd this video. We can see a pair of studio condensers up the front but the singers proximity to them doesn't effect the sound (even if you were to adjust the levels throughout the performance you'd still get different frequencies at different distances. I'm assuming they used a lav mic, possibly for the live performance as well combined with the reverb potentially during the performance (would help the audience to hear the subtleties of the act).

If you're doing a studio recording where you can control the environment (as opposed to recording live like for sofar) then yeah, you should probably get up nice and close. Set aside a bit of time to do some experiments with mic placement to see what produces the best sound to your ears - maybe straight on from the from and slight top or bottom approaches. These variations will make little changes to the overall sound (such as when micing from below you'll generally get more lows). Try changing the distance between the vocalist and the mic to get different sounds. Once you've acquired the recording into your software have a play around with lots of different options for EQ, reverb, etc. Perhaps come up with three different options, then go take a break and listen to some music that you like before coming back and deciding which one you like best and then making final adjustments to it. Overall the key is to experiment with different options to see what you like the most. Never settle for just blanket apply something to everything. You'll get in some general habits, but all music performances are unique and deserve to be approached as such from an audio engineering perspective.
