I like that he's honest about not liking the lamb. Too many food channels on youtube where they act like they love literally everything they try. Prefer honesty. I was just in Dallas area and wanted to try Barbs but she is only open one day a week and I missed her. Went to Goldee's and Dayne's. Barbs next time for sure!
Went to Austin and did a bbq tour over the 4th of July weekend. Went to Franklin's, Interstellar, Snows and Barb's. Also went to Goldee's about a month before that. Barb's was the overall best food we had. They 100% are a contender for #1 when the next TX monthly list comes out. I would be extremely shocked is they aren't in the top 5.
Some of the best food I've ever eaten. And Chuck and her staff are truly great people. She walked into the bbq capital of texas and turned it upside down.
My family and me will be visiting in March God willing to show our support from the 956 where she's from those flavors that's how we roll down there it's not new to the valley we're used to flavors so bring on the heat lol...
25???? She served with some Beef Ribs in Oslo Way Down South so many years ago! Now running a place at the age of 25! wish her lots of success! what an small world, from working in little Norway to that! wow! U GO GIRL! My profile picture is the Beef Rib she served me LOL haha. wish her all the best!
I went to Barbs-B-Q in April and the food was awesome. The line was really slow though. The grated lime zest on the ribs was a pleasant surprise, I now do this when I make ribs. The green spaghetti was really interesting and I plan to make my own version soon. Lamb chop was excellent as well. I recommend/request that you do a video on KG BBQ in Austin: Egyptian -Texan fusion that is out of this world; his pork ribs and lamb chops are some of the best I've ever had.
Chuck is combining the wisdom of her heritage with her own personal creativity to rock the BBQ world. Thanks for letting the world know that the next BBQ rockstar has arrived. Rock on, Chuck!
Chuck just strikes me as the type of person I want to root for at life. Maybe she is a raging bully off camera but every video I’ve seen of her she just seems like the nicest most down to earth person ever. A couple of friends are planning a bbq/sports trip to Texas this spring and Barbs Bbq is on the list.
You can't watch a video about Barbs-B-Q and Chuck and not be anything but very happy for her success. She's worked so hard and puts her love and passion into what she's doing. That's on my bucket list. When I go to Lockhart, I'm hitting this place first!
Lamb needs that lamb y or often called gamey flavor complimented with the seasonings. That why it’s good in Indian Mediterranean and African food. A strong meat that hold up to strong flavors.
Ant, Glad I caught up to watch this. Everything looks wonderful and it is clear that they are doing their own thing despite the Goldee’s influence. However, how is their brisket different? That is not so clear. Keep up the great content!👍
watch the first 30 seconds. kt explains it there. best new bbq per texas monthly. best new restaurant in the nation by james beard. best new restaraunt per eater.
I’m glad she didn’t just copy her former employer but rather used her experience as a foundation and added her own unique twist. Would love to see more veggies on the menu.
As a native Texan, beans are delicious in chili. And when you grow up poor and need to make food stretch, it’s the perfect addition. The arguments from the Texas chili purists are just old and played out.
I'm always so shocked when I remember a lot of Americans don't like lamb, especially because lamb in North America is actually a bit less gamey than elsewhere. in much of the world it's loved. it's my favourite meat personally
You got a crazy good ear! Had to use a little audio assist because the restaurant was really loud. I really should have mic’d up instead of using the shotgun mic
OK I could have left a comment on any of your other videos I don’t know why this one maybe the way the video started. But, do you ever give a bad review, or, is this really not the intention of your videos? only to bring spotlight of these restaurants. I guess after just recently finding your channel here over the weekend I’ve binged on several of these videos with I’ll say kids having barbecue joints. Great to see these younger people embracing the barbecue. I guess when I see a video like this and learn that this girl’s only in her mid 20s maybe I have ideas at bringing this good quality takes many years to perfect and maybe that has not been true maybe that was a myth. I guess with people like Aaron Franklin and others who through social media over the years has really taught many people their craft, it’s not as hard as they think. From an outsiders point of view, especially watching one video after another I guess someone could easily say, what separates one place from another? they all seem to have similar looking and similar preparation of their barbecue. Are the taste that much different? The sides are typical and similarity although somebody put a slight spin on something else like Goldies in their sauce for the coleslaw. Anyways good channel just wanted to see what the big difference is on all these barbecue joints because they all look similar and what they have to offer does any of them really separate themselves from the pack that is actually noticeable?
Best bbq is an arbitrary title in texas. I flew there specifically to do my rounds at bbq joints and there is no "best". Each have their specialty and twist on things. Went to snows, franklins, terry blacks, the original blacks, burnt bean and barb bq. Beyond that ive been to every state in america and always stop for bbq. Well over 300 top rated bbq restaurants. Trust me there is no "best".
It's great to see that Chuck Charnichart got out from the shadows of her previous BBQ job. They were holding her back and didn't appreciate her talents.
I don’t think that’s true at all. There are a number of videos where they all talk about it. Goldees let her do popups on their site to help her get going. She and Jerby still make videos together and talk about how they are all still friends. Just because she is doing well on her own doesn’t have to mean anything bad about where she used to work.
They name every new BBQ place the best & whoever runs it the best pitmaster. All these new "pitmastera" spent a year or two working at the legendary spots in Lockhart & then magically have enough money to open a restaurant using the technique they learned at the legendary joints. It's a joke. What bothers me most is how many of them aren't Texan. I think this chick is, unfortunately Aaron Franklin is, but most aren't. They're fakes.
Trace her knowledge back to Goldees and there knowledge back to Aaron Franklin and trace his knowledge back to Louie Mueller and the Mueller family back in 2005 from Taylor Texas
Apparently you missed the part IN THE FREAKING VIDEO where the place was recognized by James Beard, not Ant, James Beard...as the Best New BBQ joint in the nation. And just so you know, The James Beard Awards are among the nation's most prestigious honors in the culinary industry. ps: "culinary" means food. Now go back and read your comment and ask yourself who's the stupid one.
My problem with modern bbq- Looks great, but not $130+ great… I mean that for every overpriced Texas bbq joint, it’s stupid expensive especially for food that started out as “throw away” food that poor people turned into something special. But hey, she’s clearly doing something special, more power and all the kudos to her, much respect.
When you look at the margins and upfront cost of buying this meat - it's honestly not overpriced. Just go to your local shop and try to buy a 15lb prime brisket and report back.
@AntsBBQCookout I remember when I started my backyard BBQ hobby in like 2012 buying prime briskets for like $1.79 a pound at HEB. It's now $4+ a lb. This has NOTHING to do with high end BBQ joints screwing people over.
Bbq price is pretty consistent no matter where you go. It takes a huge time investment, not to mention the wood. Not sure where you are getting any real bbq that is cheap?

💯💯 still can’t believe those ribs, man
@josephroach9793 yea she worked at goldees for a year. And she did say that lol. She also worked at Franklin's for a while.
@@AntsBBQCookout the ribs with that sauce and lime zest are a freakin work of art.

Barbs is absolutely amazing food. I was blown away by everything she served.

Ate there last week and it was amazing. She needs twice the dining room so her experience is shared much faster.
those ribs are insane, the lime zest puts it over the top and the brisket is the best I've ever had.. the black charro beans really surprised me
Looks like Oaxaca cheese 😮 for the sausage

Love the Hispanic twist in all their dishes. Making it their own is awesome.
It works so well with BBQ

That was one excellent looking tray!
the amount of sa2 instrumentals is crazy, glad to know your editors have good taste
One of my favorite games growing up! A lot of the sound tracks and remixes I use come from my childhood vidyas
Barb may I ask what your meat bill costs a week gracias
Great video. Lockhart is a reallly neat town in Central Texas! Safe travels.
I so gotta stop watching bbq videos at night... adding to my list to try and glad she's doing well!-)
Didn’t Chuck used to reside at Goldee’s?
yes
Yep
Keep up the great work!!!! For the algorithms bay bay!!!
Love the sonic adventure music! Pumpkin hill brings me back
Loved the knuckles levels in SA2 always had bangers on the sound track
Yes, the brisket is the best I've tasted
Does all that come on the platter?
I gotta go there now 🎉
Wish I was there
If I was the videographer, I would have snatched some sausage, after the delicious lamb.
lol don't worry, we ate the whole tray after we were done filming :)
Heck yea puro 956 🔥🔥✅💯💪🏽💪🏽💪🏽🫡 much love from Brownsville, Tx 💯🤞🏽
I was here yesterday, food is incredible. The line is much longer than it was a few months ago.

It’s crazy how much effort was not put into that bite on those ribs. They look super tender
I ranted about the ribs for like 10 mins. Cut it down quite a bit in the edit haha
Even when he was just holding it after biting there was juice dripping. Great ribs are easy, perfect ribs are; those look perfect
Les BBQ gonna take that title
Did you have to take a mortgage out to buy that meal? That’s the problem with BBQ.
If it's a white Mexican cheese that pully it's likely Oaxaca cheese.
I don’t like beans either. Stay strong, Ant!
Dont encourage him! Ive been trying for years to get him to eat them lol
