  • Polish Masterchef winner, Vlogger, vet, chef and author Damian Kordas made a call out on social media to cook with Jamie and he had to make it happen! Jamie and Damian got together to create some stunning Polish Pierogi, the perfect festive treat, and a staple in most Polish kitchens around the festive season.     Ok honestly I'm from Poland and I never ever in my life tried pierogi with cranberry jam and smoked cheese...and I'm from mountains!! haha Usually with meat, chesse and mashed potatoes or mushrooms with cabbage!!

      Yes! But I would choose on your place summertime hike. In winter mountains are really pretty but unfortunately lot's of snow makes them sometimes unaccesible in some places, and also dangerous for not experienced people in mounait hiking. As a highlander I really recommend you Tatry and Zakopane (it's charming) or Bieszczady if you prefer lower hights and beautiful views of forest and lakes scattered over the land :).

    Polish food is so good and so underrated. The quality and the range of restaurants out here is great. Pierogies are the best!

    I knew it that I'll find a sea of polish people writing comments that THIS IS NOT TRADITIONAL PIEROGI. So guys - Nobody said that this recipe is tradtional - neither Damian nor Jamie. The dough is exactly how it should be. The filling is not tradtional but is POLISH, like the title says "Perfect polish pierogi" . There is oscypek, our well known smoked cheese, potatoes that we eat a lot, so I think Damian want to show us how amazing ingredients our country has. Instead of saying "Hey Damian ! Congratulations for cooking with Jamie, and for creative recipe for pierogi ! " everyone just have to say something bad, wise guys. By the way I'm also polish and I'm a cook (my profession is cook, I'm not a self-taught). Greetings for you, Damian and Jamie, great video :)

      Agree. Pierogi can be filled with whatever you want as long as the taste is nice and texture right. So many combination, both savoury and sweet!

      To be honest, maybe they are not 100% traditional, but there is a lot of fancy new restaurants that are more and more creative with pierogi and other dishes. I like what Damian did here - still used very traditional Polish ingredient and used it in new way. And if culinary culture doesn't evolve - it dies.

    This is so lovely, good on this young chef for trying to get himself noticed internationally and succeeding at it! Now even a random person in Arabia knows about pierogies (the untraditional version it seems, thanks Poles in the comments ;D) also nice of Jamie to grant him his wish!

    I m from Poland and this is exclusive version of pierogi there. Typical and most tradicional ones are with onion and cottage cheese with salt and pepper or with sauerkraut (??? o know sour cabbage) and muschrooms but theres a lots of versions of pierogi in out country including sweet ones with strawberrys blueberrys etc

    I am from Slovakia and we have almost the same dish - called pirohy and they are served with a filling made out of sheep cheese. They are very good!

    Dough: 500 grams flour, 230 g warm water, 1 Tbsp oil. Make into a ball and let it rest for 20 minutes. Roll out so thin you can see your hands through it. Use cookie cutter to make perfect circles.
    Filling: 1 Large white onion diced & sauté in ghee, 1/2 tsp salt, 200 grams smoked cheese (gouda or cheddar), 800 grams mashed potatoes, 100 grams of cranberry sauce, 4 Tbsp cottage cheese, 1/2 tsp nutmeg, 1/2 tsp black pepper, 2 Tbsp cream. Mix all together. Boil water with 2 Tbsp salt and drop in & cook until pierogi's float to the top. Remove from water and pan fry in ghee until golden. Add sour cream & chives.

    I don't like the fact that all foreigners associate Poles with alcohol and heavy drinking. Yes, we do get boozy but not more often than any other nation. Anyways, pierogi are awesome and you should definitely try them!

    Lovely. Also great to see something you just never see over here in the uk. Plenty of Mediterranean and Asian food but never Eastern European it’s lovely to get a glimpse at different countries

    Thank you for a delicious complex modern twist on a pierogi filling! I usually do the traditional stuffings and often wondered what other fillings could be winners and this is it! I loved it and had a glass of ice cold white wine to pair it with.....simply delicious and I give it 10 stars!

    Wow! I love pierogi! Please do us some more eastern european recipes! Maybe a collab with Alla's yummy food (she's got some amazing recipes) especially coming up to christmas and winter though polish and czech and hungarian food is just unbeatable!

    Years ago, a friend married a Polish woman. She made really tasty meals from traditional Polish recipes. Mainly savoury, pork dishes. I also remember pierogi. She made it with berries or currants. Can't remember exactly. Definitely fruit though. She made custard with it. Loved that she combined traditional Polish with traditional English grub. Good ole Eastern Europeans.🙂

    Polish people, chill out :O Maybe such a filling for pierogi is not really orthodox and traditional, but why not using classical combination of oscypek and cranberry, in pierogi filling? I think this is very interesting recipe combining some really oldschool polish flavours. So smacznego and nie srajcie żarem!!! Peace&love

    The traditional christmas eve ones are with sauerkraut and forest mushrooms. We are also keeping a fast during this evening, so there is no meat and there should be no alcohol, but there is a lot of different fish dishes and dishes basing on poppy seeds.

      @Dwaine: Today's Ukraine was part of Polish Lithuanian Commonwealth for centuries. We share many customs and even words in our languages. However Polish Christmas Eve customs are part of Catholic tradition. On Ukraine Orthodox Church is dominant, and this tradition is a little different.

    This particular type of pierogi is actually pretty far from the traditional way that majority of families in Poland prepare it.

      Just wondering, is there really a traditional recipe? From what I've heard every family has their own recipe of fillings and dough. Right? And if there is a traditional recipe I just have to try it, only had pierogi once in my life when I visited Krakow, but I'm not sure what they were filled with.. :(

      You can fill it with whatever you want. I only know for sure about russian pelmeni which is basically the same thing, but you fill those typically with a mix of potato, ground meat, onion, cottage cheese, and, very important, parsley; or fish, or vegetarian. This is a christmas edition with the cranberries. And he says also it's his grandma's recipe :) and you ALWAYS have sour cream with it!

      +Nicky Hendriks no this is not a traditional version, I've never eaten this one and I'm Polish... the traditional one is the one with cottage cheese, potatos and onion, or the one with sour cabbage and mushroom or minced meat and onion. Those three types are the most popular. But there are plenty varieties of pierogi.

    The cheese chef used is called OSCYPEK. This smoked cheese is made only by Polish mountain people called GÓRALE. Great recipe.👍

    Thank you very much for this video, I have never eaten dumplings with oscypek cheese , but you can stuff dumplings with various things. I like very much with blueberries and sour cream.

    I've been mastering my pierogi skills for some years now, and just when I though I reached "grandma quality level", here, on a British channel, I find some strange yet appelaign stuffing, that I've never ever heard of. And I've look at all regional recepies I could find.
    Well, will have to try this one. Mix of flavours looks promising. Great job Damian, great job Olivier.
    p.s.
    pair it with some bitter quince homemade liquor (wytrawna pigwówka), should go well together.
