Kenji’s Cooking Show | Balsamic Strawberry Salad

  • I first tasted a salad with strawberries and olive oil at my friend Deborah Krasner's house in Vermont. She included a recipe in her book "The Flavors of Olive Oil," (which is fantastic: www.amazon.com/Flavors-Olive-....
    This version uses baby kale (her's uses spinach), with strawberries, decent (but not too expensive) balsamic vinegar, sesame seeds, and some really good olive oil. Salt and pepper, some questo fresco, and that's it! It's delicious and simple. Make some!

    He is making a salad video and not a grilled cheese video so we don’t think he just eats carbs and cheese all the time

    Queso fresco is one of the things I really wish it wasn't so hard to find in the UK.

      I think "Farmers cheese" is a decent replacement - do you have that?

      Any hard salty fatty cheese will work just dine. In israel we eat watermelon with feta, bulgarian cheese, and various ship cheese (just like the salad he made only he used strawberries)

      feta and bleu cheese would work well too, which i assume are pretty easy to get in UK. :)

      This may anger many.. I find Lancashire cheese (creamy type if you can get it alternatively crumbly) or Bulgarian white cheese a better substitute than Greek feta as it's less salty.

    My favorite thing about Kenji is he never gets frustrated with his daughter for interrupting his videos. He drops everything and puts his family first. Setting a great example of what it means to be a family man

    My daughter is next to me while I watch, and she keeps commenting how precious your daughter sounds.
    Also, I cut queso fresco into cubes and toss it into butter chicken as it comes off the heat. It’s better, the firmer it is.

      Yep. Just Eric queso fresco makes a passable substitute for paneer in a saag paneer, too!

    Any particular reason for cutting the tips of the strawberries? That's actually the first time I've seen someone do that. I just eat them, tips and all (cut off the green top obviously).

    i feel like i need to make a spreadsheet of all of these videos and what lessons are included: this video teaches us about balsamic vinegar and raising children via Mr Wizard, the oyakodon video includes a list of multiple dishes that involve simmering in dashi/soy/sake/sugar

    Can you use feta as well kenji? Also for someone looking to be more healthy but cook variety what balsamic product would you recommend?

    Does anyone know what kind of olive oil he uses in that fancy bottle looking thing? I've been into trying different varieties of olive oil and always down to try a new brand.

      Not 100% sure, but I've seen him using bottles of California Olive Ranch in passing. Wouldn't surprise me, gets recommended often in all the food blogs, websites, etc.

    which cheese was he putting on in the video? I googled queso fresco but google gave me "any white cheese"

      Feta would be very good. Even blue cheese could work, as long as it is not too strong, otherwise it will overpower the delicate taste of the strawberries.

      @@zimbozimbi2766 I'm just talking smack, don't take it too seriously. You do have a point. Kenji is experienced enough to work safely and cautiously barefoot. But just in case something happens wearing shoes and aprons is never a bad idea.

      @@G0hrx is just that I saw too many people getting badly hurt over the years, even waring uniform, metal cap toe shoes, and aprons over the years, big ass experienced chefs included.

      @@zimbozimbi2766 a lot of those dangerous situations can be prevented with good habits while cooking, being aware how you place your knife and tools when you're not using them, common sense while handling big pots with hot liquids, position pan handles away from your path etc. Most of the time small droplets of splattering hot liquids have cooled down enough when they reach your feet. But in the end it's kind of like crossing the road at a green light without looking left and right, it shouldn't be dangerous, but when one day some crazy fellow runs a red light while you're crossing, you wish you had looked.
