So what would you use if you were like me allergic to onions if you use it everywhere and you are not the only one because I see it on almost every labeled ingredient lists in food processing. And no dairy or citrus because of allergies again, so no butter, oh and no salt. And yes it’s complicated but welcome to my daily life.
I would look at an Indian spice called asafoetida. When added to a sauce in an oil base so I'd sizzle some black or white pepper with it. It adds a great flavour. It's used by the jain community in India who won't eat alliums ( onions leeks garlic) because in doing so they may kill insects in the ground. I hope this helps. allergies suck I have a friend with mast cell activation syndrome ( allergies on steroids) so I know a bit about it

I had some problems like that a few decades ago and I got off of all wheat, barley, rye, and oats, ( all Glutens ) and ramped up on my 90 essential nutrients. After a few months, my allergies went away. The little villi in your intestines need to be rebuilt and it may take a while, but it can be done.
I'm late but, tomato, perssimons, cucumber, watercress leaves, bell pepper, mushroom, and season with authority dried and fresh herbs. That's not a recipe just watery base alternatives to onions. Nothing wakes up flavor like salt. I use a pinch of pink Himalayan or Kosher. Wakes up the flavor with out a salt taste or danger to hypertension. If your allergic to salt then you can pour sauce on a naturally salty fish. Also Char other meats with pepper and add a smoked element. That helps with flavor and no salt. -Cravings Catered by Diane.
