I think pumpkins are pretty high value, nutritionally, like most squash. (And pumpkins and squash do grow out of the ground on vines. That was the stem Boo snapped off with his teeth!) I was always told that the brighter the color of the fruit or vegetable, the higher the nutrient value. I like using pumpkin in waffles and muffins and other baked goods. I love Boo's expression as he's working on something like that pumpkin with a screwdriver. He looks so serious and determined!

Boo is really great with that screwdriver. He really loves those pumpkin guts and seeds. Pumpkins are loaded with lots of vitamins. Most orange and red fruits and vegetables are. They have lots of vitamin A and C and other good stuff.
