Not all enzymes stop working on 40C. Depending on the plant some actually activate and work better at 50C-60C. It is a new level in healthy food , when gently cooked at these temperatures food is already half digested by its own enzymes when you eat it , therefore making the most of nutrient intake and energy saving.

Amazing video topic!!! This is something that no body talks about in the raw community and i think its a very important conversation to have. Bravo for daring to challenge the status quo. Steaming potatoes has been proven to be the cooking method that raises blood sugar levels the least. Nobody doubts the power of Raw , but even hippocrates institute says healthy people need only 80 percent raw, the rest can be cooked and definitely steamed is the best cooked option. Thats what Joel Furmam has been saying for years and outlines very clearly in his book “Eat to Live”

in the future I will have more videos on freeze drying. The best honestly would be to add the SAME freeze dried food with your steamed AND fresh food and Juices! together and eat it, you will get the benefits of each of the three methods!
Informative Thanks. I drink smoothies at breakfast boil vegetables soup then make lentils,quinoa, brown rice, w the stock. Microwave my sweet potatoes 🥔 juice on my day off when i have time. Salads and fruit frozen and fresh farmers market is back open again yeah. Its sustainable but i dont have the time or resources to grow my own at this time . But i do look and feel 100% better since cutting out cheese 🧀 hallelujah. ❤

No. He does recommend freeze drying over dehydrating. But freeze dryers are more expensive, though sometimes payment plans are offered. The freeze dryer he recommends is Stay Fresh, not others like Harvest Right. He has a video explaining why he chooses Stay Fresh brand.
In commercial industry there are vacuum dehydrators, but I have never seen a home model. That being said, freeze drying is a technology that is available now, and is a significant improvement over dehydration. If vacuum dehydrators do come available, I am confident freeze drying will still create a higher quality end product.
You took more than 25 years to understand it? I hope that you won't take many more years to realize that you can gently cook other foods. There are no sientfic evidences that rew is always better.

I garden so I low temp dehydrate all my fruits and vegetables then when I’m ready to eat, I steam some them and I cook some low and slow.
