Carolyn, I have used a bunch of different marinades and this one is the best. I also made my own in our lechon asado video and it is also amazing, There's a link in the video description to shop the marinade that I used.
I make something similar with 2-5lb chuck roast on my kamago joe big joe. Also I love using Fogo super premium lump. I switched from Big Green Egg to Kamado joe 3 years ago because I noticed Big Green Egg had started changing on waranty to favor them more than the consumer and dealers. I still have my eggs just do not use them as much. The eggs I have are the medium and xl large big green egg. My kamado joes I have are the big joe series 3 and the joe jr.
Can you do a short video showing a closeup opening the charcoal bags?? I can never get that string to work how you do. I always end up having to cut the top open with scissors.
That looks super delicious, and a great twist on the classic. Beef is a step up from pork, this is a marvelous idea. Got to get some of that marinade or make some based on online recipes.

It was actually a strange set of circumstances that led us to brisket for this but sometimes, that's how the best ideas come about.
