Plastic Brewer Comparison - April vs Origami | Coffee with April

  • This week, we're replicating the same recipe using two very different plastic brewers; April vs Origami.
    We're using the prototype of the Origami Brewer in plastic, kindly provided to us by Ply Pasarj after his wonderful performance in the most recent World Brewers Cup in Milan. We highly recommend watching his open service performance that can be found easily on RUclips.
    We're comparing this against the plastic version of our very own dripper, shipping out to those who placed pre-orders in the coming week.

    200g Brew Water
    92 Degree Water Temp
    100g Pour - 50g Circle/50g Center - 10-second pour from 0:00
    100g Pour - 50g Circle/50g Center - 10-second pour from 0:35

      The plastic Origami is not out yet. It will be released in 2022.

    Hi, as many probably ask I also have a question about grind size on the origami. You mentioned that grind size should follow brew time and also in another video you mentioned around 30ish clicks on the comandante. I tried going as fine as 21 clicks but I can't seem to get to 2.10. My brew always ends at 1.45 even with 21 clicks and I tasted quite strong bitternerss from the coffee. Going coarser makes the coffee drinkable but watery, with even faster drawdown. Did you mean 30 clicks standard comandante method of from fully closed? Sorry for the long question.

      It is because April is using the Plastic Origami in this video which has a different flowrate from the normal origami.

      Are you using a specific light roast coffee? From which roaster if you don't mind me asking?

      @@tonynurrahman3467 I drink mostly from friedhats, drop coffee, tim wendelboe and sometimes april. I think the problem lies in my origami, it has always been very fast. I've heard people complaining about clogging when using origami with kalita filter, but my kalita brew always finishes before 2 minutes. The coffee tastes good tho at around 24-27 clicks

      @@MichaelAhonk I tried brewing it with a grinder equipped with SSP 98mm burrs and a KEY of Weber.
      Using these grinders, it felt like it was definitely overextracted after 2 minutes and 5 seconds of brewing with Origami air.
      So what is the most appropriate total brewing time when using Origami air?
      I used the Kalita wave filter

      @@DS__112 unfortunately I have moved on from this recipe, even though you can get a good cup of coffee but for me personally it is not as complex as when I pour 3/4 times. I am now using Elysia Tan's recipe for origami air and it works wonders.

    What grind size on comandante was this please?

      We have stopped referencing comandante grind size as it's not our preferred hand-grinder. However, we recommend finding the grind size on your grinder that gives you the referenced brewing time.

    Why use the same grind size for each brewer? Wouldn't it be better to optimise grind size for each brewer and then compare the coffees at that point?

    There is no such thing as best or better brewer 😂. Because ultimately your best coffee will come from the brewer you are most familiar with. Meaning your grind size, water, pour techniques are all catering to that particular brewer and coffee. So familiarity is big ++. It's probably 98% you the technician and 2% the brewer. So how do take full advantage of your 98%? Taste, taste and taste. Develop your palate.

      Thank you for watching. We disagree, in our experience using our familiar pouring structures and grind approaches on new brewers has at times create very interesting results.

      @@coffeewithapril thanks for making it! It's always interesting to see different opinions. In my 20 years of roasting and love for pourovers I realized there is no "one size fits all". As you probably know, grind size, flow rates of the dripper, drawdown time, H20, the drippers thermal mass , heat conduction... and so on all affect the brew. People are more in tune with some of these factors consciously or unconsciously when your brewing with a familiar set up. I even designed a dripper years ago taking in all these factors into account and it makes great coffee but... Mainly because I'm familiar with it. If I buy a Ferrari does it make me a better driver... absolutely not.
      As long as we are all having fun with this journey that's the most important thing right😊
