    Manny's Wheat-less Chicken Nuggets Recipe:
    How to prep⇣
    - Preheat oven at 350 degrees
    - Add 2-3 spoons of coconut oil in a large glass oven pan
    - Chop 1-1/2 lbs of Organic Grass Fed Chicken
    - Whip 2 eggs in a bowl
    Add Pink Himalayan Salt + Ground Pepper to the egg mix
    - Place Almond Flour or Coconut Flour in a container
    - add more salt, pepper, and organic Adobo to the flour mix
    - Begin to place chicken pieces inside egg mix to coat well
    - Place a few egg coated chicken pieces in the almond/coconut flour mix and cover with lid
    - Shake up the container with the lid until chicken is fully coated with the flour
    - Continue coating all egg coated chicken pieces in the flour & shake it up
    Place all the chicken pieces in your glass pan and into the oven for 45min - 1 hr and check chicken in between the cooking process to flip to the other side and cook evenly. ENJOY!

    - Cut up Organic Butternut Squash fries into long strips
    - Place it in a glass oven pan with coconut oil
    - in the oven for about 40mins at 380 Degrees
    - Flip fries in between cooking

    You and your husband are doing a wonderful job with your son. You're also great role models for your nephews. I know how hard it can be raising a child with autism, but they are such a blessing and it allows you to see life through a completely different lens.

    I don't understand why there's so much negativity in the comments. Your videos always make me pick up my mood & feel more positive.

      No, It's ok Hun, the way I see it... I only saw about 3 negative comments out of thousands of positive ones. Its only natural to happen. In any large group of people there's always 2-5 folks who are only here to disagree and spread their negativity and the rest are here to respectfully share their opinions, not judge and spread positivity. Being I have more positivity than negativity I don't focus on those 3 people who commented negatively. I instead focus on comments like yours and thousands of others who have good intentions.

      keep in mind nobody talks about you unless you're doing something noteworthy. I bet half of those who left negative messages are watching every one of your videos to see what you're going to do or say next . so while their words may be negative, they secretly admire you. =)

    you just got a new subbie here!!!! wow this is the first time i saw a youtube family so dedicated about health! I'm into this lifestyle too. I try my best to provide non toxic and organic stuff but i try to work around my budget especially being a single mother (My priority is Organic Food). I'm also into alternative medicine!

    The butternut squash looks super easy & tasty. I can totally understand why you both are "about that life". If I was in the same situation I would want the best for my child as well. Does little manny goes to school or home schooled?

I love how open you two are about everything that is happening and sharing your journey with Little Manny. He is just blossoming! There is a school for students with challenges in White Plains that I'm sure you already know about it. It has a great reputation.

      +Manuel Ramos we would like to know the answer to this question please! We are also so interested to learn more about your teaching methods with little Manny and more about the other things that worked for you! My son is about the same age going to first class of primary but in school the phycologist says he may has some characteristics of autism, though not sure yet! I disagree with her cause I see the progress he has done! But I wanna help him more to be concentrated ! We are very interested to learn more since you guys research it so much!

    my youngest brother is Autistic! The best thing is for him to have life skills and a healthy diet. It's not something to be "cured" of per se but managed. He can live a long, happy and prosperous life as someone with Autism.

    Can you do a more in depth video about parenting with autism? My daughter is autistic and we live in Boston and the city has been a blessing to us but we haven't done anything that was mentioned.

    I understand that your son has a difficult condition and you are trying to be the best of parents. However, just know that there is a lot of wrong information out there about autism treatments in general. There are a very few to none evidence-based treatments with good results. In fact, we don't even know why autism happens, if its genetic or environmental or both.

    I love the info you share my cousin has a son who is autistic. I like how you guys discuss diet but feel it is really hard for people who are on a lower income to afford to be at organic since it is twice as much as regular food. I know my cousin definitely couldn't afford to go organic because she has 7 kids and does not make a lot of money. Food stamps are only given once a month so mist people buy what they can get more bang for the buck that is going to last for a month.

    Thanks for sharing your lifestyle with us I find it very inspiring! Ever since I went vegan over a yr ago it's opened my eyes up even further, I'd love to switch over to spring water and need to get a filter! I'm sure you're also going to help so many other families who are also on a journey with autism :)

    one of my students did hyperbaric chambers regularly and stopped this year - and we definitely saw a difference in focusing ability and alertness. I wish we could have one in my classroom for all my students!

    Alba, Manuel (I don't know if I have the right to call him Manny... hahaha )Hello from Cameroon. I just want to tell you that son is going to be cured. The autism will go away from his body. I Watch from ATL1 and, I would like, please, to suggest to you, to subscribe your baby boy to Karate (I don't know if it is Karate in English but I hope you will understand). Find out if it's good for him, but I do know that it is a great sport. It is very mind strengthening and it gives you the positivity you need to go through toughness and difficulties of the life. It is just my opinion feel free to make your researches (to judge whether you would like it or not for him) and also on Chinese and Japanese lifestyles to help you and baby Manny. Really, if I knew more about it, I would have help you in a very large way. I'm so sorry that I aint. I really love you I follow you and I wish my marital Relationship to be as unique as yours.     Hi Alba & Manuel! I'm super new to your RUclips channel (as in I just discovered you in my Recommended Videos section [or whatever it's called] in the past hour or so) & I'm obsessed w/ how amazing the two of you & your family are. I'm very much into an eco-friendly/Earth conscious/organic lifestyle as well in various respects, so it's pretty refreshing to discover RUclipsrs like yourselves. Evolving (especially daily) into the best version of yourself is one of the highest lifetime achievements I believe a person could ever aspire towards. Of course, when evolving into the best version of yourself, those of us who are wise & teachable (ever-learning) know that replacing/growing out of poor habits (i.e. lifestyle-wise) is a true sign of maturity, so kudos to you for growing wiser.

    Thank you for your honesty & positivity. I also don't understand all the hate/negativity that some people say. You have a beautiful family. It's funny that you said that re: NY & CA (the part where you said when you left NY, you liked being away, but coming back & it's different in a better way)...Reason why I brought that up is because my fiancé & I are almost in a similar situation where we moved from our home, Atlanta, GA up to Philly. And, after being in Philly for several years, we're more than ready to move back to our hometown (Atlanta) & it's a different better feeling. :)

    Alba and Many, how do you guys stay so patient and positive about Little Many? What do you guys do when a doctor or someone says something you don't want to hear? My 5 year old has slower speech and has trouble retaining information. She's in a regular kindergarten class but is "behind". I know my little girl and her abilities. She writes her abc's and counts, sings...I just hate when her teacher lets me know the opposite. I feel like it's almost like she doesn't see her abilities like I do. I feel like she might think my little girl is a lost cause and just pushes her away from the rest of the class. I mean I get that she needs the extra support but idk how the way she even talks to my husband and I...it's almost like she just doesn't care.

    You need to vlog making that chicken it looks great! Also I am always trying to expand my mind when it comes to autism as this is the basis of my career. I am always interested to see which books parents like to read or have read so I can read them as well. I have to look at my job from many different angles the professional, the parent and the kiddo. Also have you guys thought about doing a chalk board paint on one of little Manny's walls to let him express himself?

    have you guys considered eliminating dairy products from little manny's diet? it's so harmful to the body. just a suggestion :)

      Agreed. Not just dairy but wheat and soy are just as bad if not worse. Some kids can tolerate dairy and they've shown success with camels milk raw kefir and colostrum.

      +carmen lara Dairy products actually have beneficial properties for the body. The harmful part is the hormones and antibiotics that are fed to the cows that go into the dairy products. Nothing wrong with dairy in and of itself unless the individual has lactose-intolerance.

      +Sabrina Genesis well dairy itself is also highly unnatural to the human body. Humans have no need for it like we have no need for dog's or horse's milk. Milk also increases mucus production in the body. It has many negative effects on the body.

    First I would like to thank you for all the information you share. As a mother with similar challenges I find myself overwhelmed with the amount of information. You truely are an inspiration and I can see the beautiful balance you have created, and I know thats not easy. The first 3 yrs of our diagnosis I was on auto pilot and lived in fear. Ive made peace with life and found even more strength. Your son is so so precious he really is and your love and devotion to his well being in all aspects will move mountains! Ok so I am really interested in the ozone your mentioned in this vlog and I looked at the link, I've read the controversy on these and usually with things that work there is unfortunately, if you could briefly tell me how you guys plan to use it and what precautions to take. I believe as we peal back the layers is the next layer to address in my sons treatment.     Tried the chicken nuggets recipe with chicken wings it was delicious. Used almond flour. Now I know why you said to use a glass tray.

      At what point did we neglect who he is? We take every opportunity to embrace his personality and intellect. We are reaching to make sure he is as healthy and happy as possible not to change him to be like anyone else.

    Read Jenny McCartney's book. Her son HAD autism. It is awesome. She fought the doctor's everything. She was able to cure it with diet. PleASE READ THAT BOOK!

      Eating meat is a personal choice. not everyone likes to eat vegetables all the time. some people also have specific nutritional needs and so they need animal protein to survive. no need to jugde.

    Yes hunny!!! I definitely can relate! I have 2 kids with Autism (6yrs & 3yrs). 3 yrs ago we moved from PR to FL just so our son could get a better help because he didn't say anything. Once we got here, he was diagnosed with Autism, Speech & Development Delay and Hyperism. As soon as we got to FL he started getting Speech, OT and ABA Therapy and the difference is amazing! Doctor's tried to push us to get him on pills and medicine because he just likes to bolt/run away but we said NO! As of right now, they are both doing so good in their therapies and school, I thank God everyday for having those 2 special gifts and seeing and understanding the world thru their eyes. Since we have had some scary situations already (like really bad, thanks to his running), we are getting him a Autism Service Dog, which we are all really excited!
    Siempre recuerda que Dios no le da cargas a personas que no puedan manejarlo! Lucky for us, we got lucky and blessed at the same time!

    Hola Bella! Not sure if you tried this with Manny, but I wanted to tell you that my cousin has Autistic twins and she enrolled them in a Behavioral Therapy specialized school in Florida (fully subsidized) and they've improved drastically. My good friend in Texas runs an ABA clinic in San Antonio, TX, The Blossom Center for Children. They have graduated students with proven results! Aside from the diets and lifestyle changes, ABA definitely works. I hope you find what works for your family. Hugs! XoXo

    Kids they grow up so fast, in joy the experience, have fun, laugh out loud...
    Think about how much better person you become from the experience with your child.
    Our kids teaches us more than we ever know, I didn't know this when my kids were little.

    I love your guys. You all inspire me to do better and be better. I am learning so much from the things you share. I thnk you are doing such a great job as parents. And I think it's wonderful that you all let little Manny write on the walls because there's nothing a little paint can't fix, but your can never get a child to open up and redirect if you shut them down from their creative expression. Because my son didn't speak completely until he was four years old, him now beeing 10 I have never told him to "shut up" or "be quiet" because I never want him to feel like he can't speak ever again. People think I'm crazy, but even his wanna be rapping about school stuff, or jumping around saying thank you, Jesus, because he got a new car or a new game, or just a favorite snack. People sometimes say "Te'Jion be on 100" and I LOVE it. Anyway, thank you so much; Alba and Big Manny for sharing your lives with us. I love seeing a new upload and I try to watch and support always

    Hi Alba and Manny! I've been watching your videos since you first started RUclips. You've encouraged my full change 2 years ago to using completely organic and raw products for my skin care, beauty and hair. Around the same time, at the end of 2014, my little brother (he was 17 at the time) got diagnosed with MS. Living in Hawaii, there are no specialist that can help and the doctors heavily pushed pills and injections on my parents for him. My parents decided to take the natural route. He's been taking Vitamin D and K as well as using Frankincense for its amazing properties and health benefits for various things. We are moving back to the East coast (where we are from) but our big struggle with a family of 4 is being able to afford a full organic lifestyle (meals and things) Do you have tips on making your money last longer at Wholefoods or other organic stores? Or ways to stretch out meals to make them last longer through the week? As well as snacks etc.
