What happens is that patty is being forced down on that hot surface and gets an incredible crust. It's unlike any other technique, and I've done about all of them. It's all due to the amount of even pressure being applied and the burger still maintains its shape, rather than being all smooshed and misshaped.
Dude, put the Mayo down on the bun you will lay the meat on. That prevents the bun from getting soggy. Then you can use the lettuce and tomato to help protect the top bun if you don't throw the stuff on both sides.
Thanks for the comment. This burger is actually part of my burger series, where I recreate restaurant and burger joint burgers. This burger was cooked and dressed the way Smashburger does it. I mentioned this during the cook, but that footage hit the cutting room floor on Rob's version of the video. I understand the conventional way to dress a burger isn't quite the way they do it. Darien is a burb of chicago, they do make fine bugers, along with 5 Guys, also in the area, my fave burger joint is Red Robin, my boss gives me gift cards for RR every x-mas :)
5 Guys gives you a huge bag, usually end up taking some home. i was in a "biggest loser" competition at work recently, seems RR doesn't try to offer "bottomless broccoli" LOL

I thought they were two different plants, since the names seem to be used interchangeably in the US depending on what part of the plant you're talking about (in spice form or seed form I've always seen it referred to as coriander, but in leaf form I've always seen it referred to as cilantro).
Meat would prob taste a lot better if all the spices and stuff were mixed in before making them into a Patty. Idk if it's just me but the taste of an unflavored burger is gross. Canadian burgers are made like too I find. But overall it looks yummy Lool :)

i don't recall a "Darien" burger at our smashburger, i do like the fact they serve beer there.
This is "The San Diego Burger" Smashburger creates specific burgers for each city they land in. This is what they came up with here in San Diego.
