I have always wondered about this topic on *which nutrients are lost* at various temperatures & durations of cooking since Europeans and some east Asians barely cook (steam sauté etc) the meat as compared to Indian subcontinent style where pressure-cooked/ deep double fried methods are prepared.
Our meat is not that clean we use steroids and chiken live in unhygienic condition with tumours etc so we have to cook it properly and also our indian genetic are more capable of digesting plant based protein and milk and we had more fat in our deite ancestoraly

You mean protein in 100 gram of raw chickpeas will be same after cooking.
No way dude, soaking, boiling, and cooking process will definitely reduce the protein quantity in chickpeas as well as lentils.
