Yes I noticed it too that Sri Kapoor did not use Haldi but then the dish would turn out yellow. Better way would be to use Saffron Flowers and the aroma would be totally different. Also piercing the panneer would send the masala into it. The idea is like piercing baby potatoes to drive the masala in when you make ‘Dum Aaloo’
