About 7 years ago when my mom had a lot of cucumbers growing in her garden, I followed an online recipe which was somewhat complicated and time consuming. My family absolutely loved the end result, but I was too reluctant to make it again the following year. With this easy recipe, I'd love to make it this summer when the cucumbers are ready. I love cucumber kimchi. Kyuho's mum is really sweet. Happy belated birthday!! My birthday is in 10 days and the original plan was for me to have few days off work, meet friends, travel to local sights for a day. I really wanted to celebrate my birthday in a Korean Restaurant located over an hour train ride away (which is the closest one, there are none locally). Due to the lockdown it is no longer possible. I have actually already bought and eaten my birthday cake in advance couple of days ago as the owner of the shop which sells my favourite ones told me they are struggling with their suppliers and deliveries so they are running low on products. I thought it was better to have one early than none at all.
