One of my fondest memories.
My mother in law taught me to make menudo and after years of trying to make it, I’ve now become the designated menudo maker in the family 😂 They’re from San Antonio and taught me with the menudo mix and it really does give the absolute best flavor! We also add pig feet in our menudo and all fight over it.
I learned how to make menudo from watching my mom cook for all 9 of us…..I also add pork feet to my menudo the bone marrow is what gives the menudo taste so much better……I add 4-5 lbs to 10 lbs of honeycomb menudo …..and plenty of hominy of course…..😋😋😋😋😋
Just made my first batch of barbacoa for Christmas morning. Smoked it with mesquite for a couple of hours and then into the cast iron for about five hours. If I knew how easy it was I would have made it long ago. Happy Holidays Arnie.
I smoked it on my homebuilt rig which is roughly the same dimension as the Weber Kettle. Fire on one side, meat on the other. My recipe was nothing more than seasoning the meat with standard BBQ rub. Salt, pepper, garlic. Approximately two hours of smoke. Then in a covered, cast iron Dutch oven in the oven at 225 for about five hours. As far as I can tell, it would be pretty hard to screw it up. @@quikeism

@gabrielanavejar4524, the powder is as authentic as homemade, it's real chiles and the other menudo ingredients are all in there too plus you can add more of any of them if you prefer. Pigs feet is ok too if you like that flavor.

I don't have a roaster, so I just wrap the cheek in aluminum foil and cook it in my tamale pot. As he showed you, it just is so tender. I just discovered his channel.

Arnie when i go to the local Mexican market chain and I go to the butcher counter I ask for lengua and cheek and they always give me chuck roast. I've been told I need to go there in chefs clothes
What! I never seen the powder mix! How much more easier! I was always taught dried peppers boiled blended Strained and then added and also patitas in the menudo
Great vid for sure wow!!!!! One thing I use is cruz spices menudo mix I used to always use Fiesta menudo mix but once I found that oh no I'll never go back.... I use the cruz spice mix and i also use about 2 tablespoon of WOW in it and geez its fire!!! Thanks again for the great vid

Yo para el Menudo lo compro entero,,,, yo lo corto y le quito toda la grasa,,,,,,,,,,,,,,,, despues le cocino con patas de res por tres horas o mas en mediano lumbre y lo dejo que enfrie lo pongo en el rifrigerador por toda la noche y al otro dia toda esa grasa esta arriba y solida y la remuevo..... despues le pongo todos los condimentos la cocino por media hora y listo,,,,,,,,,, UN MENUDO TOTALMENTE FAT FREE,,,,,, nada de grasa para los que no les gusta comer tanta grasa....... Mijo, I bought some Chihuahua Smoked seasoning salt at Wheatsville COOP here in Austin! Hijo de la Chihuahua I love it! It's a finishing salt, I think you could just sprinkle some of that on the salsa like I do or on the barbacoa or the menudo! Try some Guarrontee you will like it! I cut it with some regular sea salt cause its strong smelling! There it's the Herbs & Spices brand, couldn't find it online there's several others, can't recommend them but try them if you like! I've used it in tamales and guisadas, if you don't have a smoker?
Try adding pata de puerco to that and notice how the broth becomes rich and velvety, plus you get all the flavor from the bones. I'll let you slide this time for adding grano to the menudo 😂

My dad made the best menudo and I got the opportunity to make some and get his approval before he passed away but I really really wish we would have been able to make it together just once. I regret not cooking with him very much. He was a grill master and a ceviche king too. I miss him. Cherish all the moments with your loved ones in the kitchen. ❤❤❤ Much love! I have never made menudo with a powder mix, it looks really good! My mom taught me to make from scratch with the red dried chiles.

Yesterday did the barbacoa really simple only mistake I did I use 4 bayleaf it was strong nxt time just using 1 or 2 leafs
