I've tried to follow someone else's recipe before with some guavas I picked up from my local Farm Boy, however, I QUICKLY realized it was going to be an epic fail. Both my husband and I are Bahamians but he loves guava duff. So when I went to Florida recently, I picked up some canned guavas to try it again. Thank you so much for sharing. From how to prepare the dough to the sauce, it was awesome! I learned a new trick with the foil as well because last time I think I used a cheesecloth and it was a disaster! But for sure, I am happy I followed your recipe this time! Great Stuff!!! l think I am getting an extra present this year lol.

I've been told these were the original Conch's (Key West). When I was younger I wasn't interested in history. But now I am. Sadly my grandparents or anyone who could teach me are gone. I stumbled across you channel from a comment on FB. My question is this, I am unable to get fresh guava where I live, so no guava shells for the roulade. Can guava paste be used instead?
Hi Sierra, what a fascinating lineage...yes you may use Guava paste by diluting it with a little water and placing in a saucepan over heat until it melts like jam. Spread it over the dough and roll up into a roulade. Save 1 cup of paste to make the Guava Rum Sauce and enjoy!
Recipe sounds delicious! Can’t wait to make it. It’s been over 10 years since I had guava duff in the Bahamas and I still think about it. Question…for the sauce, I would like to make a kid friendly version for my little daughters. What do you recommend adding to the sauce maybe, besides taking out the rum?
Where are you located? If you’re in Toronto, I purchase canned guavas at La Perola Supermarket in the Kensington Market. Usually any Latin American or Caribbean Supermarkets.

As a Bahamian I've never seen that this in all my 41 years. There's not healthy way to make a duff. Butter sauce is a must! NO WHIPPING CREAM GOES ON DUFF EVER!!! OR GARNISH! OTHER NATIONALITIES are going to see this and think we eat like this. I know it's many ways to make a duff but ma'am this is not it

Sauce to loose boo. Omit the evaporated milk. Nappe, should coat the back of a spoon.
I was saying they putting a twist to it which is fine but its not Bahamian

Even try adding the quava paste to the dough you could get a great Quava flavor to the same with the sauce

You may add 1 Tbsp of coconut or almond extract for a delicious enhancement of the sauce 😉

Yeah. That rum sauce was way too thin and I was too shock at the whipped cream on top. Gee. I'm sure it tasted fine but not traditional.
