No, the whole pizza is well cooked however the middle is very thin, so thin and soft that you can flip it over.

I'll stick to the traditional pizza. It's been around for a long time for a very good reason. Let's where these guys are in couple of years time. I found offensive the comment by one of these guys that those who stayed with traditional pizza didn't have the talent to be be innovative.

absorbs 1g of oil . i find that hard to believe, the dough is probably losing water in the dough as it fries, but absorbing equal amounts of oil in return.
she makes the comparison saying a regular pizza (Olive oil) has more oil but i would assume she fries in normal , less healthy oil.
Va bene ok ma la pizza di pepe in granì e’ indietro di lievitazione o cosa, quelle bolle in mezzo. Bho tutto bellissimo per carità,ma a me sembra indietro. Tutta sta maestria.
Occhi miei cosa dovete leggere...quelle "bolle", tecnicamente formano "l'alveolatura" dell'impasto e la loro presenza (e dimensioni), indica proprio una corretta e lunga lievitazione.

@@lucatasimento9517 No, ti ripeto, le bolle sono dovute ad aria intrappolata nell'impasto durante la lievitazione. Più bolle=più aria=maggior/miglior lievitazione

Well, I had Pizzas in different parts of the world but non are tasty as the Pizza I had in Athens Greece in a small shop made by a Greek guy. It was and it is the best tasty Pizza I had in my entire life, nothing like it anywhere in the world not even in Italy.
