I split a Pork Knuckle with a friend in Prague at a restaurant that had been open in that spot since the 1600's. It is the whole lower leg of the pig that contains the two bones between wrist & elbow/knee & ankle. The meat resembles rib meat, but is even better. Served alone on a cutting board with horseradish & 2 knives; &, of course, washed down by plenty of Czech Pils. It's hard to put into words, how great this all was. :)

I think I know why: once they used intestines from animals bred here for the casings but they're a little thick but now they get foreign ones a while many even came from Iran because they were so thin and tender. So actually you don't need to remove the casings anymore but it's a habit (but only with Weißwurst)
Ew it seems like a lot of Oktoberfest has become like disneyland... on a more positive note the more traditional part of it reminded me of the Augustiner Kellar in Salzburg Austria, a very traditional bierhall! Prost!
