    Loved the video.. it reminds me of a pig picking when I 1st moved to North Carolina..The wind was blowing my way.. the smell was soooo good..the taste was good too...

    It's a great sight to see Americas or anybody for that matter have a family gathering and keeping our traditional values and more so sharing it with our next generation. It's a beautiful thing to have family cookouts theses days since people forget what family values are and to be free to gather anytime you want and enjoy each other's company.. God Bless

    I love these kinds of get-together. We use to have huge fish fries with the fish my Dad had caught all year long. Miss those days.

    I remember our so called family used to do things like this but when grama and grandpa passed it all went south family ain't family like we used to be I admire you folks I wished ours was like that again but that would take a act of God. Love your recipes.

    You brought back some long ago, wonderful, memories. First frost of
    every year, my uncle killed a hog or 2 and using a big homemade A frame
    with a winch positioned over a 55 gallon barrel of boiling water, he
    bled, gutted the hog then swung it over to be dunked into the water for a
    bit then swung it over to a couple of old pallets and we started
    scraping. This was the mid 1950s and the smokehouse was made ready for
    the meat that needed cured and the freezer was cleaned and ready for the
    rest of it including the home sewn, unbleached muslin bags we made for
    sausage. We were dirt poor but, never went hungry because of the garden,
    the farm animals we raised and used as food. Smoked pork was so good
    and still a favorite of my family.

    We used to keep a pile of sand next to the pit to deal with flare-ups. This brought back a lot of happy memories of good times and old friends who are gone now. Almost brought a tear to my eye. This is exactly the way I was taught to do it. We'd make a dipping sauce from Apple cider vinegar, paprika, cayenne pepper and melted butter. It was hot stuff but good.

      Don Tripp The sand is a great idea we will definitely have a sand pile next time. I am also going to mix up some of that sauce. It sounds delicious.

    We live in Florida, but we did wild whole hogs in a pit for the 4th and Labor Day. My brother-in-law also boiled the hogs head in a steel drum for the filed hands, one of their favorite things. We did this for years.

    Thank you for this video, m'am! Learned again some extra things, eg the volume of wood needed for a Pig Pickin' and the timing of adding new coals! Hope that one day I can do the same thing, here in Belgium (Europe)!

    Never tried this with a pig, we always raised our own. Helped my uncle do this with a deer one year for Thanksgiving, only we dug the fire pit down about a foot. Took all night and 1/2 the next day. It was delicious.

    That's the way I was raised to cook a hog plus we always cooked a Brunswick stew in a black warsh pot... Some family members still cook a hog for the family reunion each year.. We still cook stew in the warsh pot and we also cook chicken leg quarters on a rack over the pit.. that's some good eating.

    If you have the grate lower, you don't need as many coals. Helps prevent flare ups because the grease soaks the few coals rather than being lit by many. Also, if you use a burn barrel with a grate 3/4 way down you use less wood. Scoop the coals out of a port in the side of the bottom of the barrel.

    Enjoyed watching the all night pig cook. Me and my brother's use to do that at Christmas when mom & dad was still with us. Tuff break on the grease fire. May need a little more space between the coal and meat grate. Sorry you didn't show flippin the pig, seasoning and saucing. The way we were taught in SC was cook meat side down. When done, flip over like you prolly did. Pour some vinegar over the meat, salt til it's white, black pepper til it's black, red pepper til it's red, then work in the vinegar based sauce while diggin into the hams n shoulders with a large long handle spoon. After all that is mised in good, refire and get the skin into cracklin. Looked like a grand ole time and brought back lots of memories. And yes Jesus is Lord.

    Needs a drip pan under pig to catch drippings and it wont catch on fire. We've cooked on a wooden box lined with sheetmetal. Has a sheetmetal top where you build fire. Hole in corner of bottom fir dripping. Coonass microwave is usually what its called. I love the whole hog cooking. It all is so tender and moist except skin and it crunchy like pig skins

    after about6 to8 hours we did skin side down basting the cavity stoken the fire every hour till done. did that for about forty years. good times

    It's great to see you back, I was thinking while I watched this how clever the 'old' country people used to be, no gadgets & gizmos but things like this down to a science. (Nice to see the men working away 😁) They would have been roasting one pig while they worked at preserving another, and everyone involved. You'd have to learn how to do this at your Daddy's knee wouldn't you? So one day maybe Charlotte will host one for you & Bret. Great video Thank You.

    While you were smoking your wonderful BBQ I was on a plane to Scotland. While you were eating your delicious looking food, I was eating haggis with neeps and tatties. Haggis ... everything leftover from a sheep but the BAA. Neeps and Tatties... turnips and potatoes cooked and mashed together. The haggis wasn't too bad but I bet your pig was better. God Bless

    So beautiful where you live! I lived in the Ozarks for 12 years and it kind of reminds me of there. I am in Florida now but am working on getting back to the Ozarks. The only thing better in Florida is beaches and no winter. But the rivers in the Ozarks make up for it because they are so beautiful and clear. And that pig is making me drool! Anyone who has not experienced a pig roast like that is missing one of life's great pleasures. SOOOOO delicious! Did you raise that pig yourself? Home grown pork tastes so much better than what you can buy in the store. Blessings to you and your family.

    Hey Becky I love your channel I'm a West Virginia Hill Billiy and I'm new comer to your channel but I noticed when you use your salt and pepper that you take the lid off and I know why it takes for ever to get the amounts you need But I fixed that i simply took my handy dandy drill with a small bit and made the holes bigger problem solved I have another set I put on the table hope this tip will be useful to you ! Keep up the great recipes and talks you do!
