Does this require a custom cabinet or can the pocket hinges work with any preexisting cabinet assuming room is created for the doors to recess?

no it will have to be a custom cabinet

I'm not sure that is entirely true for all other pocket door hinge systems as my carpenter is about to do this for us. As you say, you will require additional side panels to hide the mechanism plus space between them to house the slide hardware @@utturkarswoodculture3603
