  • Healthy Oatmeal cookies
    With bananas and dates
    - 4 Tbsp unsalted butter, at room temperature or coconut oil
    - 1 cup mashed bananas( about 3 medium bananas )
    - 1 tsp vanilla extract
    - 1 large egg
    - 1 cup all purpose flour
    - 1 tsp baking soda
    - 1/2 tsp salt
    - 2 cups rolled oats( you can use barley flakes to )
    - 3/4 cup chopped dates
    - 1/2 cup seeds of choice( i used sesame and pumpkin seeds)
    - 1/4 cup unsweetened shredded coconut
    In a small bowl , mix flour, baking soda, and salt. Set aside.
    In a big bowl, whisk the coconut oil(or butter ) ,vanilla extract and egg, beating well 11until smooth.
    Add the mashed banana ( make sure it’s a heaping cup ) , whisk well. add the flour mixture until just
    combined. Stir in the oats , chopped dates , coconut and seeds .
    Drop cookie dough onto baking sheets. Flatten them slightly with the back of a spoon .
    Bake at 350F for 12-15 minutes, until edges are golden brown.
    Remove cookies from cookie sheets and cool. You can freeze the cookies in a freezer bag for up to 3 months .
