I bought a brand new GSX-S750 two weeks ago. It’s really hard to find them brand new in NZ because like you said they’ve been discontinued for nearly 2 years now, but got a great deal on it because it was old stock. Absolutely chuffed with it and I think you made the right call not trading in for an MT09 because their performance on paper is quite similar. I too was looking at an MT09, but couldn’t justify the NZD$8,000 difference brand new for a similar riding experience
