Dang that's a bummer. And to think that there are hundreds of varieties of potatoes and Americans have narrowed it down to less than 5 varieties that are in most grocery stores! I mean, it makes sense economically but still! So now I'm on a mission to try all the other types.
You’ll miss the fat at first so make sure you have avocado and nut based recipes on hand. I came from Paleo and still crave a lot of richness and umami, and fat. I love cashew based sauces, and potato based carbs and anything pasta and it feels very rich

Do you do anything w the skin? Supposedly that's got the most nutrition. Put them in a smoothie maybe?
That's a really good idea. When in doubt, throw it in a smoothie! Normally I get creative with the skin, I don't know why I didn't in this one.
