  • There are so many tips and tricks when it comes to colouring buttercream, but this is my favourite one and it's especially important when talking about colouring RED buttercream!

    One thing I have noticed about the (Wilton specifically because it's the only one I have used) no taste red gel is that it never goes as dark, or as vibrant. This time last year I was mixing up my red royal icing for my Christmas cookies. I know about the darkening over time, and adding brown to achieve a more Christmas red (I absolutely love colour theory!). However none of my usual tricks were working, the red just wasn't behaving properly. I just kept adding more and more, but the colour reached a certain saturation and then stopped. Of course it was no where near as red as I wanted, it was more like a really dark pink. After hours of frustration, I gave up and started putting everything away. It was at that point that I noticed I had grabbed the no taste red so I dug out my regular old Wilton red and voila, it suddenly started behaving the way I was accustomed to. It was a major face palm moment for me lol

      Yes!! I continually have the worst luck with Wilton colours in general so I avoid them when possible. They can get the job done most of the time, but there are a few colours that are just so off so I avoid it!

    I would like to hear more about making sure there is no aftertaste in food colourings. Do you have any recommended sources?

    Love your content!
    I did try the Wilton - Christmas red gel colouring and heated my Swiss Meringue Buttercream, but it turned out to be bitter.
    I would love to try your suggestion and give it more time. But, if I decorate my cupcakes and keep them in the fridge overnight, will they taste as good as fresh ones? Would love to know your experience with this :)

      Not a huge fan of Wilton colours in general. They work alright, but I find the colour they’ll say they’ll produce is a bit different.
