Red-wrinkled flabbergasters! ID guide: Edible Frost's bolete and the shaggy-stalked bolete

  • Bolete mushrooms are in full bloom during the hottest part of the summer in the South, including my favorite mushroom of all, Frost's bolete, which I call the Red-wrinkled Flabbergaster.
    Here are the ID features for the Red-wrinkled Flabbergaster:
    1. Cap: Bright red and sticky to the touch, often shiny and slick when young
    2. Pores: Dark red, sometimes with clear yellow droplets of fluid called guttation
    3. Stem: Red with flaming yellow-gold shaggy reticulation on the stem
    4. Flesh: Turns blue when cut or bruised
    5. Edibility: Edible and zesty like lemon. Though quite sharp-flavored, it's a nice mushroom to eat and pairs well with dark greens and other acid-friendly foods
    I also show how to ID some other boletes, including:
    1. Shaggy-stalked bolete (Aureoboletus betula): A super-common, highly recognizable mushroom that shares the Flabbergaster's citrusy sour flavor
    2. Violet-gray bolete (Tylopilus plumbeoviolaceus), which has a streaky purple stem and is too bitter to eat.
    Burnt-orange bolete (Tylopilus balloui), which has a bright orange cap, white pores that stain dark brown, and looks wholly unlike most Tylopilus mushrooms.
    So join me and celebrate the colorful magnificence and abundance of 2024's blazing hot bolete summer!

    I found a Frost's bolete yesterday, and thanks to you, I now have an ID. The guttation on these is amazing. Didn't realize they're edible. 😄

    Literally, the first time I found this with my husband. We wanted to drop to our knees and give thanks. The beautiful golden drops on the bottom resembles some type of exotic jewel. #MushroomFantasies.❤

    HI Anna, found a flush of carnival candy slime mold. I picked a bunch of Craterellus ignicolor chanterells. I have been eating Corrugated Milky's too, lots of em up here. A friend of mine was worried that I had picked Jack-o-lanterns. The variety of Craterellus sp. here are bright orange. The underside where the forked almost gill like structures are turn a pinkish lavenderish orange in the mature ones. Hole in the center of the top, hollow stems. Yummy.

    Checked my Frosti Zone earlier today (Hudson Valley, NY). Nothing so far. Sometimes I get hundreds, but it's been a few years. Great video.

    The one you wrote, beware on the bottom of is called the bicolor Bolete. This one is also edible and one of the most beautiful in the forest.

    Hi Anna!
    I'm in North GA...Have found both of these recently. I threw away the more red ones b/c they stained blue. :( The more yellow stalk I have dried some, and am going to batter and fry some. Don't love the slimy caps when sautéd.

    I agree with you i would not take a bite of a known poisonous mushroom even though they say you can and spit it. It still is something stupid to do.

      Baorangia bicolor can be difficult to ID, perhaps? There are several similar looking bicolors that are red and yellow and stain blue, and it may be dangerous to think they are all the same.
      That being said, I have found them and eaten them and they were nothing to write home about.

    I know you think you have a cool mushroom knife but mine is much cooler. hehe. Ballisong Butterfly special metal alloy for the blade. A collectable hand nachined knife. Its great advantage the blade can be exposed or sheathed with only one hand which is very useful when foraging mushrooms. You can take it out of a pocket, open it with one hand, use it, close it with one hand and back in pocket. Whereas you have to use two hands twice. hehehe.

    I am new to mushroom since last spring and have tried an edible bolete and was not impressed at all.
    It's spongy and tastes like sour unripe bitter spicy fruit and will make a dish worse. I don't understand why bolete are so popular with foragers.
