I used this recipe for tuatua fritters (there not being too much whitebait on Waiheke...) - it worked brilliantly. A suggestion - work with two bowls, one with the ingredients, the other with the beaten egg white. Put six scoops of egg white in the pan, then six scoops of the ingredient mix on top, then finish off with six more scoops of egg white. Saves you having to whip the egg between scoops.
