    Little tip my mom taught me for when you're adding flour to thicken a sauce or gravy. You can mix the flour with a little bit of cold water to make a slurry and then add that to the hot gravy. You never get any lumps, it's very helpful!

      Or room temp butter, to get a butterball also is a good thickener.

      Milk works really well if it's white gravy. You can use it in cream corn as well!

      Alternatively, you can sautee the flour with the bacon/sausage/chicken drippings to cook the flour. Then add water, stock or milk. Less of a floury taste this way.

      Maybe only a little more than people get today... since most cooks were women, they used their aprons to pick up hot dishes and (having personally done this with authentic 1770s apron/clothing) I can say it's about as effective as any hand towel that chefs today use. (Not as effective as those thick wool/rubber oven mitts, but chefs from what I know avoid those because it makes you much clumsier in a crowded kitchen where emphasis is on speed and agility to get meals out quick).

    This is somewhat what our modern culture is missing...the joy and process of actually preparing meals with one another...not only does it stir up ones appetite madly but it instills a sense of teamwork and effort...all while producing a very nourishing and satisfying end result

    Having grown up in Williamsburg, Virginia, this was all very familiar to me. Although we did not live in the restored area of town, it’s amazing to see how much of Colonial life actually seeped into the culture of the present-day town. From pewter mugs, the stoneware, to bowls and utensils that all looked exactly like what I would have seen in my own home as a child. Even their costumes are familiar because there were so many people that worked in CW and dressed in 18th Century garb, that it was a common sight anywhere in town.

      That was basically a Sunday meal. We still did that every week on Sunday in my family, until we all moved away from home, and my wife's large family has that tradition still going on.

    New viewer here. I noticed one small thing: we are used to eating meals when everything is hot at once. This kitchen would have cold mashed potatoes, lukewarm asparagus, lukewarm or room temperature veggies (from the gravy) and one hot chop. Because there is no refrigeration of any kind, cooking would have to go on all day. A meal like this one would be a feast for the average American frontier household, since it includes an orange, cream, nuts, pork chops, etc.

    My 3rd great grandparents were married in1826 so I enjoy a small glimpse into their lives. I think cooking like this would be hard doing it day after day! I don't envy them.

      It was hard work, but maybe spending each day cooking wholesome food in a way might be more pleasant than modern life such as rushing in traffic being in a stressful job like nursing, and then still having to come home to housework etc.

      its interesting cuz unlike now where we rush to eat, eating back then was much more of delicacy and people would take time to enjoy the food and the time it takes to make it.

    Hello, I found your Chanel on RUclips today and I watched VERY much videos from you. I enjoyed it. I think, life in the Victorian age was not easy but people learned to do everything with patience. That’s a contrast to our „running“ world. I love, how you do everything so calm and give everything the time it takes. And: I am really hungry now. It must be very cozy to sit around a table as a family and enjoy the meal.

    Everything has to be made in stages. Only so much room on the fire. Love the vessels to hold the food, bowls and cookware. Very cozy and I'm sure cooking over a open fire made everything more delicious 😋❤️

      Cooking in cast iron does make the food taste better. I have a cast iron skillet I cook in on my gas hob and I find it tastes so much more flavoursome than using stainless steel.

    I know the names of some grandparents who lived in the early nineteenth century. It's great fun and very interesting to see some of the things they would have done. The dinner looked great but I can see why severe burns to women were such a problem back then. I have read that burns, and I suppose resulting infections, were a leading cause of death. Love every episode.

    My wife is currently learning to pressure can on a wood Monarch cookstove. As you have stated..it's a very hit chore to do in the Summers heat.

    This brings me back to the late 80s being on my grandparents farm..the woodstove was so cozy and the thick cast iron pots cooking fresh farm food...rotary phone ringing occasionally at the end of the mysterious hallway.....what a time it was

    That looks a tasty meal. The spent bacon could be rendered and turned into bits.. then the fat used to season asparagus. Actually, if I had a hearth. l think cooking like this would be fun and challenging. Thanks for all you do in creating these educational videos for us. 🇺🇸

      I believe is great going back to the 18 century because we never know if we have an earthquake, some type of world calamity and need to go back in time to survive. I know how to grow my own food for 35 years, know how to start a fire between rocks without a modern grill, fix some things around the house, and many other things. Let's hope is not necessary.

      I once, when I lived in Wales, was invited to a friend's house for the weekend. His mother did jacket potatoes in a coal heated aga. They were the best tasting jacket potatoes (baked) I've ever tasted! The potatoes in this video reminded me of that.

      Many Women in this time period often accidentally did catch their cloths on fire. They either died or the ones who survived suffered from their injuries for the rest of their lives.

      @@pamelacox967 You beat me to it. Yes, many women died each year from cooking fires during this era. It was common. A strange story from my family tree: One of my distant cousins in the 1800s died from another cooking accident. Her obit said she was cutting up a rabbit for dinner. The knife slipped and she got cut badly. Infection them set in and she died about a week later from the infection.

      Yes; there were no such thing as Sanitary & Sterilization way back in History. Sadly; The majority of Surgeon's in War never knew of the Importance of it. I Love all and anything to do about History. I've often wondered & wanted to live in another Time Period; but my want for knowledge overrode that thought pretty quickly.

    Can you please do a video like a historical example of a day in the life for a common couple living in that cabin, but not only cooking. Like what time they would wake up, what first chores need to be done, getting the water…washing dishes…caring for the kitchen utensils..? Lol idk stuff that they would do historically and the reason they’d be completely exhausted by the end of the day.

    I remember camping for weeks at a time growing up. I cannot imagine how rewarding life would have been then. In terms of how so many people just eat fast food, watch tv etc. Life is OVERLY simple....or OVERLY complicated.

      Life was probably simpler but also much shorter for many . For example, A simple cut on the finger could become infected, become blood poisoning and then sepsis , death. It was common to die of infected cuts, ect.

      Ah yes, the good ol' days where women would spend hours cooking or doing laundry because the machines that did those things didn't exist yet. Laundry was literally a multi-day process.

      Agreed...life was hard work, and it's reward was family, friends, a good harvest and a roof.....simple and made you appreciate the little things. Today, we are overrun with meaningless needs and wants....give me the old ways anyday.

    It is funny that back then they did not have much and used expensive plates and today we have so much and use paper plates.

      Australians don’t use paper plates. When I started watching recipe videos here on RUclips about 18 months ago I was so freaked out by all the paper plates that are just wasted by Americans. It’s so unnecessary. It’s not hard to wash a dish, and there are seriously cheap dinner sets out there. You could save a fortune!

    If you roast the vegetables and bacon before cooking them in water, the grav will be much richer and more flavorful. And after they're cooked for the gravy, you can still crisp up the bacon over the fire and eat it, too.

    Mix the flour with cold water before adding it to the hot liquid to avoid lumps, if you aren't going to make a regular roux.
