I was born and raised in northern New Jersey and lived on the east coast until moving to North Beach over 20 years ago. I guess I've never lost my Jersey/Rhode Island accents.

Dang, you are GOOD! Grew up in an Italian restaurant family with a father who cooked for the Rat Pack. You hit everything right on and your knowledge of the many regional Italian variations is more than impressive. And your sass tops it all off. So approachable. Intelligent. Fresh. Easy to understand. Perfecto.

Please, please, grate your own parmigiano or pecorino. You'll really see the difference the real stuff makes in your dish.

beautiful! that is a long lost art. even in italy, no one cooks like this anymore. this makes me remember my youth when all the italians in my city hung out together and did stuff like this. there was not much to like there was today , so my parents and their friends cooked and made meals like this. it was always festive and there was always food to eat. we seem to have lost so much so I try making nice sugos like this and give it friends and family and make them remember the good days that our parents taught us.

I've just found you !! So excited. My mom was born & raised in Chicago. Her best friend was & is Italian and they would come to visit us in Kentucky . They would bring Italian sausages in an ice chest bc it was 60 yrs ago. Kids galore so the gravy pot was huge !! So...mom is 91 now & I needed some more tips so I can make the gravy. I learned a lot today , so THANK YOU !!

Absolutely fantastic! You remind me of my father, God rest his soul. Cooking was his gift. Watching you in this video was like watching him, all those years ago in the kitchen. He learned all his recipes from his Grandmother, and I used to watch him cook. It was an art form you seldom see these days. Thank you!!! At last, I've found it again! Ciao!

Gianni thank you for sharing. You brought back memories of my ma. As I watched you work right away I realized Gianni can really cook. We are 5 brothers (just 4 of us left). We visit whenever we can between the bay area and Chicago. I'm the one who cooks. Ma used to say, one of you has to learn...
So I was paying close attention and cheese'n it from ear to ear because of all the fond memories all the way through the recording and when you got emotional at the end... I may have started a half second before you...
    Again Thank You,
    Jesse

    Hey Gianni,
My Father's family was from North Beach. They lived on Greenwich St just one block below Coit Tower! My Uncle's played ball at North Beach Playground and Funston Park with the DiMaggio brothers!!
Watching you make that gravy brought back so many memories of my Grandmother making this gravy EVERY SUNDAY for her family gathering dinner.
She would go to the early morning Mass, come home and prepare the dinner. AND THE FOOD!! EVERYTHING HOME MADE FROM SCRATCH! We had two kinds of pasta, meatballs, sausage, beef and pork rollitini (sp), and on special occasions (Christmas and Easter) beef raviolis or stuffed manicotti! The raviolis she would roll out the pasta on a bed sheet on her dining room table! Put the filling over the pasta, then roll out the top layer of pasta over the filling. Using just a pizza cutting wheel she would cut the pasta into 2 inch squares!! THE GREATEST TASTING RAVIOLIS IN THE WORLD!!!
She'd be at her little stove and put her kitchen chairs at the stove so her little grandchildren could stand on them and watch her cook. She spoke about half English and half Italian and try to explain to us what she was doing, but at times she would mixed the words up if she couldn't remember the words in English.
My mom, aunts and uncles, close neighbors, everybody brought the supplemental food: veggies, bread, wine, and dessert. The women would be in the kitchen helping "Nona" prepare the meal and gossiping about family and friends.
The men would be in the living room having drinks and (supposedly) watching the kids.
Then we'd all sitdown at 4pm for Sunday Dinner and "Manga" for a couple of hours. Everyone eating, laughing at the adults stories, and filling our stomachs with the most wonderful food IN THE WORLD!!

    i'm an electrician .
how that figures in to your wonderful braciole recipe is as follows.
i was helping out my italian friend and barber of 40 years at his new house , finishing his basement.
in true italian fashion , his wife had gravy going all day (though she had a full kitchen upstairs , she made the gravy in the basement.)
they were such gracious hosts and provided a virtual feast when i was done for the day.
among other things , she made braciole.it was amazing.
i do a fair amount of cooking myself and have made it many times since .
it helps to see other peoples take on this standard recipe
i love your passion and enthusiasm . a favored recipe can really bring us back .
thank you for the wonderful recipe.

My mother's father came from Naples and when he arrived in the North End of Boston, the woman he married didn't know how to cook like he was used to, coming from Jewish background. My grandfather had 7 sisters and he had a few of them train my nana how to cook Italian style. It all got passed on to my mother and now...me. I use MUCH of the same techniques as you do in this video. Right from-a-the old country! Salute! Thank you for posting. It sure brings back a lot of memories...and my mother called "Gravy" too...always on a Sunday!

I'm originally not far from San Francisco and used to take the bus (too young to drive yet) and then walk to Fisherman's Wharf for sourdough bread, fight off the sea gulls and enjoy the view of the bridge. When I was old enough to drive, I had a job at a small restaurant on the Embarcadero called "The Captain's Table", later married and moved to TN. I was told to always keep my memories, because it has changed so much. I've looked at the pictures you've shown with your video several times and got a bit home sick. Thank you for your video.

Gianni, Truly enjoyed watching you cook. I make mine the same as yourself. I chop all the veggies so that I don't remove except for the bay leaf. After 3 hrs of cooking you can't find anything but the bay leaf! I'm fond of garlic so I use a bit more than you do.Love seeing you cook. Both my parents were born in Italy and cooking was a very important part of daily life. Thanks and God Bless you.

Ciao Josie. Thanks for sharing your technique. Sometimes I chop vegetables or turn them into a paste in a food processor then saute them in olive oil before adding the tomatoes. Any of these methods impart the flavor of the vegetables into the sauce or even a soup base. Yes, remember to remove the bay leaf! Keep on cooking.

This Sunday gravy has taught me so much. Smashed potatoes, never peeled em like that, never loaded em up with olive oil or roasted garlic before. Gianni, this video brought tears to my eyes, for a couple of reasons. When I was growing up my Mom worked for a Family owned Italian Restaurant, I would go there after school to eat & see her. I remember having Braciole there once, I have been looking for the Recipe, I think yours is very similar to what I remember, I couldn't ask my Mom how to make things, she wasn't much of a cook. I cooked for her when I grew up, she's been gone since 2007 & I'm getting the desire to cook again, finally!

Love this recipe. Growing up my mom made Sunday gravy. Just love it, and you brought back memories.

Well done Chef. I remember growing up in our semi-poor neighborhood and the Italian families would feed all us kids Sunday gravy. They kept the meat for family so we got pasta, gravy, bread and a glass of Kool-Aid. It was wonderful!
