Managing carbs is important but eating low carb everyday is not the goal. Learning strategies like carb cycling, adequate protein and fiber at each meals, movement after meals can really help your blood sugar.
When you say low carb is not sustainable, what exactly do you mean? People can't do that on a long term basis ... or it's not good for your body? 64 years old. In 2019 I accidentally discovered (long story) that the cause of the abdominal pain that had been waking me up at night was "gluten/wheat." A dietician told me it was unlikely I had been an asymptomatic celiac until my early 50's, but I never went back to eating any kind of bread/cake/pizza/crackers and have been pain free. On the rare occassion I do eat yummy bread ... you got it, abdominal pain waking me up. In general I eat 20ish carbs a day. Protein and veggies is what I eat. I'm not a natural rice/potato eater, but you make me wonder ... should I at least once a week try to eat a sweet potato?

Carbs aren't the enemy. Processed or refined carbs may very well be, but fruits and vegetables are not our enemy
Can you give more protein ideas if our diet is dairy free? Plant based protein choices?
What about if someone is diabetic or insulin resistant?
