I’m my KK (would be the same in a KJ) I put the wood chunks on top, get it to combust and let it burn for 5-10 minutes and pop in the meat. The smoke is white for the first 20-30 minutes and then goes blue. I use way more wood than the rules say. I say “what rules”. I get great food every time, I don’t pay attention to the temp until I reach 275 and I hold it there. I haven’t a clue what the temp is when I put the food in. Doesn’t matter. Just so happens there’s a pack in the fridge waiting on the heat, # breakingtherules normally I’m a baby back man but these #stlouisribs were calling my name. I have never been one to wrap my ribs and I’m glad to see someone doing it differently.
If you really think about it, traditional bbq was started over open coals/wood and the flavor was probably mostly dirty smoke. Bbq is meant to be simple, RUclips and comp participates have ruined it, imo. Idk, i think that we're all #breakingtherules at this point. #stlouisribs should be so easy to do, all things considered 🍻

I've never done the 3-2-1 method, but my guess is if a novice who likes falls off the bones ribs,3-2-1 might help them. 2 hours of steaming in foil would achieve that. They would not know the difference if the ribs overcooked anyways.
