@@clintdavis1880 spot on mate. Steam the fish then remove to a cold plate. While the oil is heating finely chop fresh ginger and spring onions. If you like it spicy then finely slice fresh chilli. Put the sliced stuff on top of the fish, then pour over the extra hot peanut oil. It will sizzle. Let sit for 5 mins then enjoy.
