Filo Mini Quiches (Filo Pies)

- This filo mini quiches can make a great appetizer or snack that looks quite amazing. Made with filo sheets for a crispy shell with a flavorful egg and pancetta filling they will definitely won’t pass unnoticed.

Ingredients
Makes 12 servings
Filo Shells
1 package (270g) filo pastry sheets
3 tbsp (45g) butter, melted
Filling
2.5 oz (70g), pancetta or bacon, diced
4 large eggs
3 tbsp chopped fresh chives
1/2 tsp (3g) salt
1/4 tsp (1g) black pepper
1/3 cup (30g) Parmesan cheese, grated
1/4 cup (60g) cream

Yes - and much better for everyone because you are eating a fraction of the complex carbs/ cooked grains you would if this was on pie crust or a roll or muffin or toast or even pita or a tortilla. If you are trying to cut down on bread and complex carbs, filo dough is the way to go. I'm sure you could substitute good olive oil for the butter too - or even coconut oil.

Looks amazing, I usually grease filo with melted butter, then fill them with ground nuts and raisins and then, after baking, I pour syrup over the hot pies.

In the USA look in the freezer section of the grocery store. Should be around the frozen desserts or pastry puffs.

Can filo be substituted with spring rolls sheets?
Never tried with spring roll sheets.. might get too crisp. Try with tortilla cups better. See here: www.homecookingadventure.com/tortilla-egg-muffins/
Must not each pastry sheet be brushed with melted butter befor putting into the muffin tray? The filo quiche look delicious..

Not at all. You can easily run like a knife between the cracks to help clean it up.
I d use the thicker puff pastry not this thin one
You can try both, and see which one you like best. We love the texture of this one as well.
