I sew it with using machine, but you can also sew it by hand using backstitch method
I attach the body parts together (head, body, ears, hands, shoes) with ladder stitch

plush fabric such as soft yelvo / Minky fabric / velboa/ felt (for body, hair)
nylex and velboa for the outfit
felt for eyes and small details
