Great Question! The bacon weave seam was grill side down. You could prop up your swineapple with a tin foil ring around it and smoke that way. I would also add additional butcher string to keep the bacon weave in place while vertical. Thanks for watching the channel!
I tried this and the pork loin had a bland paste texter on the outside. The pineapple was good and the bacon tasted good on the outside. But it had that same bland taste on the inside. Wondering if anyone else had this result. My conclusion is the acidicy and density of the pineapple causes this.
