The Lightning is cool as is, but not so cool or rare that having one like this hurts. Anyone who says it hurts the value is nuts. Having a 1 of 1, especially a Chip Foose 1 of 1 exponentially increases the value of that vehicle. He's an iconic designer known the world over with some of the best taste in aesthetics ever seen.
I like how they 1.) Paint Pin Stripes on the Truck 2.) Take the Lightning/SVT Badges Off 3.) Take the Original SVT Wheels off 4.) Paint "Kaytsak" in place of Lightning and SVT INSTEAD OF PLACING BADGES THAT SAY "KAYTSAK" 5.) Take that Wide Plastic Band from the Rear Window and replaced it with SheetMetal to make it look less like a Lightning (Sarcasm of Course)

I overhauled my own. Seems like a nice guy and what your shop did was kind. But from the looks of what the motor used to look like and from him saying its been 17 years since the motor looks that clean goes to show that he needs to take better care of it. Restore it back to original mint condition and having a badge instead of decal would be better in my opinion.
I'm not sure where this red, white and blue nonsense came from but that's a pretty basic Google search away. Slightly disappointed Overhaulin'/Discovery. Other than that snafu I enjoyed watching this episode, as I had a SIVLER 2000 Lightning and really enjoyed it.
Over twenty something years later the Ford Lightning is still a work of art.
