Hello! It's best to use fresh fish but of its not available, defrost a frozen fish. Wash the fish and pat completely dry. This helps to make the fish skin crispy. Brush with olive oil, add seasonings and stuff with herbs. Place it oven and bake for about 15 - 20 minutes. The fish temperature should reach 145 degrees and it's done! Enjoy!

For grilling I suggest using a firm type of fish for example branzino, swordfish, halibut, Mahi Mahi, mackerel, salmon.
