In E. WA my dad used to do similar. He covered with straw then plastic/visqueen. I remember pulling back the snow covered plastic and straw to get to the sweet n tasty carrots. The tops wilt back some but the root is fine
Chard is another amazing winter crop, and kale and even pineapple sage. Pineapple sage can produce beautiful red blossoms in December, but it doesn't like ice. Chard and kale seem like they can even survive ice, sometimes. I will have to try carrots! Thanks!
Winter carrots are so satisfying! I typically plant them in August so they mature to a slightly bigger size before essentially going dormant through the winter
