Elderberries have been used by humans for centuries as both food and medicine and the tradition continues at Lily Springs. We interviewed farm assistant Elle Sullivan and Lindsay Rebhan of Ecological Design to find out what they are working towards with this amazing crop. They shared with us their favorite varieties, planting and management methods and some of their hopes for Elderberry production in the Midwest.
