How to Make Puffy Poori

  • What is the secret to Puffy Pooris every single time? Let me show you in this video! A simple dough, and some handy tricks will make sure you're impressing your friends with balloon-like Pooris every single time!

    CHANA MASALA RECIPE

    INGREDIENTS
    2 cups, Atta (Whole Wheat Flour)
    1 tsp, Salt
    1/4 cup, Vegetable Oil
    3/4 cup of Water, or more to form dough
    More Flour for dusting
    Vegetable/Canola Oil for frying
    METHOD
    In a bowl, mix together Flour, Salt, and Vegetable Oil. Gradually add Water until a soft dough forms. Set aside to rest for 15-20 minutes.
    Heat Oil in a deep pan.
    Lightly flour work surface. Pinch off golf ball sized pieces of dough, and roll out until thin and circular (approximately 8 inches in diameter).
    When Oil is hot (375 degrees), slowly lay the Poori into the oil. Using a large flat slotted spoon, press on the middle of the Poori, pushing it deeper into the oil. This will encourage the Poori to puff up. Alternatively, use the spoon to splash the surrounding hot oil onto the Poori. Be very careful and cautious when working with hot oil. Cook for 20-30 seconds on each side, and then drain on paper towel.
    Serve hot with Chana Masala!

    Love it. You have gotten me over my fear of making things like pooris and saag paneer for my family. Any time you want to learn kashmiri keema, let me know. We will do a TDOT cook-off. My kids can make the rotis.

    Thanks for posting the recipe. My mom usually makes these for my kids. They really wanted it so guess what I'll be making today. They call it pockets and put beef curry inside it to eat. Yours turned out so airy and light, crossing my fingers that mine come out that well :)

      if you fry papad in the oil, its GONE. other than that you can reuse.

    I used to have poori bread all the time when I lived back on the US east coast, but moved to the west coast and no one ever makes it in my area =( Thank you for showing how easy it is to make it at home!!!

    Pretty nails. What does it have yo do with the puris?
    Even if there are some germs the heat of the oil will kill them all. She is sweet & the puries look great.

    Actually when you roll the puri, never use Aata( flour),one should use oil. In india no one use Flour ( Aata),so please correct it.

    I never use flour for dusting. As well, I would not add 1/4 cup of oil. I just add 2 tsp and that is plenty.

    I made this with American whole wheat flour. Still tasted good but it was dense, not soft. I am confused which Indian whole wheat flour to use. Can you please tell me what name and brand to select. There’s so many types at the Indian grocery store.
