This is the most difficult method for smoking brisket...you got nads for trying it. You evidently managed the heat escape very well and didn't seem to soar the temp---otherwise your bark would be black & burned. Nice job!

First Video I've seen using a smoker I own. I've tried lumpwood but seems to ignite the whole lot and hit temps off 500f!! I find this smoker hard to regulate!

I don't know how big but I bought it for $14. My meat thermometer only display 200 degrees. The internal temperature passed 200 degrees. How long did you cook your brisket?

It wasn't hard to maintain temp once I got it where I wanted it. I did add coal a few times, but it wasn't added throughout the cook. I added coals after a few hours in. Hope this helps.
This was a long and tedious process. One thing I learned, is that this type of cooking is best done in a quality smoker. But I'm glad I did it, and that it turned out great! Enjoy....
Do you just let the wood chips flame when you add them to your coals? I cant get a straight answer from anyone. I thought that if the wood catches a flame, the smoke is not good smoke. But you did it and still had the brisket on in the smoke. i see you started with chunks and added chips during right? I cook indirect as well but I cant figure out what the true way is. Flames or no flames. Your brisket at the end looked amazing. I hope to do that good some day. I started last summer 2019 with smoking so im still learning.

Casmat Matney I didn't inject it. I never do. If I'm cooking a select brisket, I dry brine it overnight with kosher salt. Choice or prime, I don't do anything other than apply rub. This 1 was wrapped for 2 hours, I think. I didn't raise the temp while wrapped.

I try this already and I failed at it.. the coals were fine at 250f but I noticed that the flame will go out how many times have you tried to keep up with the fire like once every hour or hour-and-a-half did you added more charcoal or charcoal lumps??

Hey great job! I recently picked one of these up for free from a coworker. His buddy asked him to scrap it but I looked at it and all it needed was a good cleaning out. The problem is I can't find any parts or info about it anywhere. I don't know if you can believe it but googling "backyard grill" brings up a ton of results, lol. What are you using to keep those wood bricks in? Right now I just put it on the hanging grill section on the bottom but it's still annoying to clean.....
I was using a steel grilling basket. It was pretty thick so I used it as a charcoal basket for this and a little vertical smoker I used to have. I got the basket from home depot.

Not sure if you’re going to read this comment but how long does your first batch of charcoal last? And when you add new charcoal can you keep your meat on there while the new charcoal is burning? Will it affect the taste of the meat? I’m asking because I always thought new charcoal gives off “bad smoke” until they are fully lit.
It lasted a couple hours. It did not affect the taste when I added more charcoal. Although I’ve added charcoal while smoking chicken in the past, and it tasted pretty bad. lol

@@chitownmytownofficialonean6067 I doubt you'll have issues with the texture unless you over cook it (it will fall apart) or under cook it (it'll be tough). The main thing in the winter is to monitor your temp. Depending on your grill or smoker, it may be hard to maintain the temperature you want throughout your cook. Make sure you're cooking at the temp u want, and that the meat is cooking at rate you want and to the temp you're looking for.
You have to monitor the temperature of the meat, not the time or how long it takes. It's ready once it hits around 200 degrees internal temperature. The grill/ smoker should be between 225 and 250 for the entire cook.

@@luvsic4616 it's called a grilling basket. I used it as a "charcoal" basket. If you look for a grilling basket you may have better luck. 👍🏿

KINGTERIK peace bruh. That's actually one of those grilling basket things. I got it from home depot and I use in a little vertical smoker I have.
