I have an 81 280ZX base, I only have a single mirror on mine and I deleted the AC and donated it to another ZX owner who needed it. My interior was roached but the underside only had a single rust spot in the spare tire well, typical, the drain hole was plugged. I ended up fitting most of the interior of an 84 300ZX into my ZX. It has nearly 400k and does not burn oil and starts right up no matter how long it has sat, I am a big fan of the L series engines.
That car looks good. All I would do to the car is headers, exhaust, 280zx turbo wheels, suspension bushings and some new suspension (T3 or Apex Engineered). Hope to see this thing on the track soon.
I also have a fueling problem. My original plan was also a track car but since my cars body isn't in the best shape i wanted to make it a drift car and probably swap it.
I'm pretty sure the systems clogged up from all of the bad gas, but I'll be diving into the fuel system soon to figure it out, and it'll be in the next part for sure.
