    The consistency part is true. The color, however, is determined by climatic conditions and floral sources which provide nectar and pollen. This explains why honey harvested in different locations and seasons varies in color.

      Darker colour unfortunately isn't healthier or organic.
      It just means it's made in the autumn when flowers aren't around so bees use trees instead like pine as a source. That's why the honey is darker.
      In fact it's of less quality because of that.

    I literally pulled out my tongue when the honey was being poured into the jars and I was really crossing my fingers eagerly waiting on that moment when you said " I know a lot of you were looking forward to getting some of the honey but we will keep you posted next time when we harvest which should be in about FIVE TO SIX MONTHSSS?? Ohhh I almost fainted. Anyway, I'll have to be patient. much love from Kisumu.

    That dark type of honey is very expensive here in Dubai, it's considered the gold standard of honey

      It's a ruse to overcharge amateurs.
      Dark honey isn't any better than lighter honey.
      It's just honey made by bees in autumn when flowers aren't abundant so they resort to gathering their ingredients from trees which tend to be brown like bark.
      If anything lighter honey is of higher quality due to the abundance of flowers when it's made.

    Our honey is not that dark. It depends on the nectar the bees had. We usually turn the bottle upside down and check on the bubble inside. My children grandfather use to have many bee hives. If there’s only one bubble then it’s pure. 2 or more bubbles sugar was added. It’s our Jamaican way

      Sure the colour of honey depends on the nectar the bee collected coming from a beekeeping family background in murang'a kenya.

    I went to a honey Expo in Boston about 3 years ago. There are a few facts about honey. Color and taste are determined by the type of flower the bees got nectar from. For the consistency it’s partially true it’s determined by what mixtures of nectar are in the honey. For instance if avocado flower nectar is mixed with hibiscus 🌺 flower nectar then it will have a different consistency from honey made from orange flower nectar and passion fruit flower nectar. Good job . All dreams are valid no matter where you come from.

      Yes, true. It’s also true that some honey in the super markets is light because it’s mixed with things.. so it’s diluted. ☺️

      We haven’t harvested again yet.. coming soon. It’s a bit more of a wait this time because we added supa compartments on the hives so the harvest will be bigger.

      Pure honey appears in different shades of colour from very dark, through to various graduations of brown, amber, cream and even white depending on the forage the bees sourced their nectar from.
